I just made this one with a few minor tweaks! Great recipe! My changes were instead of enchilada sauce I used Taco Bell mild sauce bevause its 0 calorie, and I used the Taco Bell brand taco seasoning. Great stuff!
Made it with the smaller Carb Balance tortillas from Mission. Saves another 120 calories and provides much more fiber. They are smaller, but the surface area of two small ones roughly equals that of a single large. I ate one and warmed up the other the next day. I also just baked the tortillas in a 400 degree oven for 6 minutes instead of in a pan. Well worth the effort as this was quite tasty and filling.

If you’re looking to save some more calories Walmart sells a brand called “xtreme wellness high fiber carb lean wraps”. 50 calories each w 5 grams of protein for $3.50. I tried this recipe out using those same tortilla and it came out great
Calories lie! Make sure you add up all macros on the package and weigh your food. It can say 50 cals for a 32 gram wrap. But the calories can actually be 80 per 32 grams. Then if you weigh the wrap, it could be 40-45g. Count count count! Labels lie!

Protein is 5G, so that's 20 calories, Fat is 3G, so 27 calories and carbs are 19G, minus 15G fiber, and that's 16 calories. Comes out to 63 calories. Now I'm not sure I'm adding up the carbs correctly as there is 7 calories missing, but they claim 4 carbs.

But Idk if that is CICO numbers or just plain maintenance numbers. Anyways... This looks fantastic, and for anyone curious about reheating it, Id highly suggest reheating it on low in a pan with a lid over it. That way the cheese remelts evenly, and you dont burn the tortilla

Track what you eat using a food scale. Weigh everything for a week and track it. If your weight doesn’t change, thats your maintenance
