    I ended up writing this out, hope it helps others. Somethings I couldn’t know from the video, like cooking temps or the pork marinade amounts.
    Makes 12-15 nacatamales
    Masa
    3 cups instant corn masa
    2 ¼ cups warm water
    Mix masa and water until well combined. Take piece and roll into ball. Press down with 2 fingers. If it doesn’t stick to fingers, ready for next step.
    Masa Seasoning
    1 bunch Mint
    3 small tomatoes
    2 bell peppers
    ½ large onion
    6 garlic cloves
    1 cup water
    1 tsp achiote paste (annatto)
    2 tbsp salt
    ½ cup naranja agria (bitter orange juice)
    1 cup lard (or oil)
    Chop tomatoes, peppers, and onion. Place chopped veggies into blender, along with garlic cloves and water. Blend until smooth. Strain sauce into masa. To this, add achiote, salt, and naranja agria. Mix until well combined; it should be smooth with no clumps. In a large pot, melt lard and add masa mixture (temp unknown?). Stir continuously for about 15 minutes. Masa should be deepened in color and very thick.
    Filling
    1 cup washed rice, soaking in water
    1 potato, peeled and sliced
    Mint
    Sliced to mayo
    Sliced bell pepper
    Sliced onion
    1 lbs Pork, marinated overnight
    1 lbs pork ribs
    Marinade for pork
    Bitter Orange, achiote (annatto), salt, pepper, chopped/sliced onion, garlic
    Assembly
    Plantain leaves (2 per nacatamal)
    Aluminum foil
    Cooking twine
    Prepare plantain leaves according to instructions (rinse leaves in hot water?). Lay sheet of aluminum foil down and top with two plantain leaves. Add masa (2 plumps, about ½-1 cup?) and spread out a little. Top with rice (2 tbsp?), 1 slice potato, slices of bell pepper and onion, tomato, sprig of mint, and pieces of pork/pork rib. Turn sheet of foil so it is like a diamond, points are up and down. Lift top and bottom points to meet above, and roll down until filling is reached. Feel to the sides of bulge where filling ends and press down to push out air. Fold the excess aluminum foil under, and fold ends again to ensure fully closed and no water gets in. Tie tamal crosswise with twine. Place nacatamales into pressure cooker. Add 2 cups water and cook for 45 minutes. Or add to large pot with a lot of water, cook for 3-4 hours (temp unknown, medium-low?).

    I'll be honest, watching this video made me want to cry tears of joy. My grandma was the only one that knew how to make them in our family. She is now too old and doesn't remember, so I'm excited to try this out!

    I'm Nicaraguan and chuckled a little at the seriousness of her 'Don't stop stirring. DO NOT STOP STIRRING." Hahah, growing up that was ALWAYS what my mom emphasized. If you were in charge of stirring the masa, it was such a big responsibility not to let it get 'ahumada!'

    I love how they're similar to ours in Guatemala. Love learning to make other variations of tamales🥰. Central America (Guatemala, Honduras, El Salvador, Nicaragua) our tamales look the same. Similar foods and customs🥰 🇬🇹 🇭🇳 🇸🇻 🇳🇮 , even our flags lol

    I first tried this on a Sunday in Managua. I had the worst hangover of my life after going to party with my nica friend. His gramma brought it out and with hot chocolate and coffee it saved my life. I’ve made this once before in Canada. It went well, but this recipe is better than my last. I’m going to be making these for my partners friend and his construction employees who are from nica. I think it will go well

    I too, grew up with these! My abuela and Mom, had us help every year, making about 100 of them-sometimes more. They were presents for our neighbors/Priests/friends..they couldn't get enough of these! VERY different variation though. They added more and we always just used aluminum foil. This brought back memories, as I will prepare some this year! Thank you

    Love it especially when you add the little round chiles and raisens around the rice the raisens and chiles turn the rice brown and sweet & spicy so good

    I found out there were 2 big tribes that took up 3/4ths of the pre-columbian Nicaragua population which are the Nicarao and the Nacahua, both of which are Nahua tribes and were said to have migrated to central america from Mexico as a result of the collapse of Teotihuacan and Tula. I cant help but feel like there's a connection between Nacatamales and the Nacahua tribe due to the similarity in the name as well as tamales being Nahua food

    We had some dear friends from Nicaragua that made nacatamales a lot. They are now deceased but I am glad to see you made them. You have more guts than I do. Because I won't even try making Mexican tamales. I find it laborsome and arduous. Thanks for doing it though. I now know how they are made.

    my grandma passed away in July and she would make these around the holidays for the whole family. I decided today that I would attempt making them to feel close to her even though she's gone now. I'm excited but also a but nervous bc I don't want to screw it up.

    A la masa, my mom also blends into the “sauce” boiled pork and the water of the pork, in León we don’t add tomatos into the mixture.

      Look our tamales in Guatemala are also similar. El Salvador, Honduras, Nicaragua, Guatemala all the same looking.
