  • Boring, almost flavorless cauliflower can become a crunchy, creamy, satisfying meal. And it's BAKED...not even fried. This is easy to make and can be made by beginner home cooks.

    Here's the recipe:
    BANG BANG CAULIFLOWER
    1 medium cauliflower
    For the batter:
    1.25-1.5 cup plant milk
1 tablespoon rice vinegar or vinegar of choice
    1 cup flour of choice
    2 tablespoons flax meal
    1 teaspoon garlic powder
    1 teaspoon onion powder
    1 teaspoon salt
    1 teaspoon chili flakes
    .5 teaspoon black pepper
    1 teaspoon baking powder
    1 cup panko
    For the sauce:
    .5 cup mayonnaise
    .25 cup chili paste
    2 tablespoons maple syrup
    Heat oven to 450.
Clean the cauliflower. Cut into medium sized pieces, removing most of the stem. Allow to dry so that the batter sticks to the cauliflower better.
Mix together plant milk and rice vinegar. Allow to sit for a couple of minutes. In a medium bowl, mix together the rest of the batter ingredients. Add the plant milk. Texture should be a bit on the thick side so that it sticks well to the cauliflower.
Dip cauliflower pieces into the batter. Remove and shake off the excess. Then roll into the panko crumbs. Place onto a baking sheet with a silicone baking mat or parchment paper to prevent them from sticking.
Place into the oven for 15 minutes. Reduce heat to 425 and cook for another 10 minutes. They should be crispy and fully cooked inside. Poke the largest ones with a fork to make sure they are cooked.
Throw the cauliflower into a large bowl with the bang bang sauce and mix until well combined. You could eat them as is, or place them back into the hot oven for a couple of minutes to allow the flavor to bake into the cauliflower.
I like to serve them with rice and another veggie.
NOTES: This is enough sauce for one medium cauliflower. If you have a large cauliflower or would like to have extra sauce, then double the recipe.
For a less spicy sauce, half the amount of chili paste.
For a spicier sauce, either add more chili paste or add sriracha or chili flakes.
This recipe works with either regular flour or gluten-free 1-to-1 flour.

OMG, I just made this recipe.
Okay so I did it exactly how you did and the cauliflower was to DIE for! I also tried it with broccoli and tofu. All three are fantastic with the breading and bang bang sauce.
Here's what I learned. The oven is better than the air fryer. I did both. I used a silicone baking liner for the oven and parchment paper for the air fryer. The silicone baking sheet was perfection. While the parchment paper didn't help it crisp as well as the silicone baking sheet. This dish is crispy on the outside and creamy on the inside with just the right amount of heat! Thank you so much for this recipe.

That's so great. I'm thrilled that you liked it. Also, thanks for the tips on tofu and broccoli. I was already thinking of making it with tofu, but not broccoli. I bet the broccoli is really good. And it's good to know that it's better in the oven then the air fryer.
