Back in 2019, I went plant-based due to some health issues that were becoming serious. Over that year, I learned a lot about the commercialized meat, dairy and egg industries and became an ethical vegan.
Always having a love for food and cooking, I quickly learned how to make many of my favorite meals, veganized. I'm here to share those recipes, make friends and create a community of people who love delicious food.

3 Vegan Appetizers ... Great for the Holidays
One of the toughest things about being a vegan is coming up with appetizers that can be shared with the omnivores in your life ...especially when cheese is involved. 😋
These recipes are not only delicious, not only vegan, but they will please even the most difficult to please palate. 💜

Lala’s Spinach Artichoke Dip
8 ounce vegan cream cheese, recommend Violife
.5 cup frozen spinach, water squeezed out
14 oz jar artichokes, in water, drained and chopped
.25 cup vegan sour cream
1 garlic clove, minced
1 teaspoon onion powder
1 + .5 cups white vegan cheese, shredded
.5 teaspoon salt
Allow cream cheese to come to room temperature. Let spinach defrost. Heat oven to 350.
Measure out .5 spinach, water completely squeezed out. Do not skip this step or your dip will be very watery. Squeeze it and then squeeze it more.
Mix all ingredients together, except for .5 cup of the shredded cheese.
Place mixture into a smallish oven safe dish. Cover with remaining shredded cheese.
Bake for 30 minutes, until the dip bubbles on top and begins to brown. Serve with bread, chips, veggies or whatever you like.
Lala’s Queso Blanco
2 medium potatoes, peeled and cubed
.5 cup raw cashews
1.5 teaspoons salt (for cooking the potatoes)
2 garlic cloves
.25 cup nutritional yeast
1.5 teaspoons miso paste
1.5 teaspoons white vinegar
.25 cup green chilis, choose your heat level
.5 teaspoon salt
2 tablespoons jalapeno juice
2 tablespoons jalapenos
.25+ cup water
Peel potatoes and cube. Add to a medium pot along with the raw cashews, cover with water and add salt. Bring to a boil and lower temperature to a medium simmer. Cook for about 15-20 minutes until the potatoes are fork tender. Drain potatoes and add to a blending cup. Add all of the remaining ingredients except for the water. Once blended, determine if you need additional water. The final product should be like melted cheese, not thick.
Lala’s Ranch Dip
.75 cup sour cream, vegan obviously
2 teaspoons white vinegar
1 teaspoon dried or fresh dill
2 teaspoons dried parsley or 1 tablespoon fresh chopped parsley
1 teaspoon onion powder
.5 teaspoon garlic powder
2 teaspoons dried chives
.5 teaspoon maple syrup
.5 teaspoon salt
Black pepper to taste
Plant milk/water as needed to thin out dressing
Mix all ingredients together. Add water or milk as needed to thin out the dip. Refrigerate for 30+ minutes before serving. Great with chips or vegetables.
(This is a very flavorful Ranch Dip. If you don't love flavor, then maybe cut the seasonings in half.)

If your pickled jalapenos contain natural flavors or natural ingredients, they're not vegan, unless clearly specified as vegan products. Go to PETA's website and see what's in those things. You need to make your own pickles and relish, salsas, etc, from scratch.

Holy *h*t!!! This is an amazing recipe! I had to adjust for my family of 7. I'm not one to look at recipes normally, but it's soup season, and I wanted a new idea. I could have never come up with flavor like this one. Also, I've had a lot of chowders in my life and this is by far the best one! Also Lala, thanks for the tip about blending it and watching for the soup expanding. That was super helpful!

I am trying this recipe but I must say that 450 degrees is a bit high for cooking . I am afraid it will burn before the cauliflower all fully cooked.
I can understand why that might make someone fearful. I'll tell you that our ovens generally do not cook at exactly the temperature they say they are at and the only way to be completely sure is to use an oven thermometer. That being said, 450 is the temperature that I have found that makes the cauliflower the perfect crunchiness. You could just keep a very close eye on it or cook it at 425 for the entire time, but will possibly need to cook it a bit longer. Good luck.

What did you do to the peanut 🥜 butter? To make it runny?
I buy the simple types of peanut butter that are just peanuts and salt, so they end up being less thick unless they are stirred really well.

It's vegan. The one I used was made from white beans and oats and is made by Simple Truth sold at Kroger stores.

Yeah, the soy milk is a bit of work - not really worth it in my opinion. But the almond was so good and really easy.

I love Caribbean food! I've had Cuban a few times and liked it. I recently tried Mofongo in Puerto Rico and fell in love with that plantain dish. I need to attempt to make it. We don't have many Puerto Rican or caribbean restaurants in my region.
Mofongo is so good! I've made it only once so far. But then I love all plantains really.
Great Comparison! I've been purchasing plant milks since 2016 and just now discovered how easy it is to make them at home. I made my first oatmilk 4 days ago and already made another batch it was so good. I'm a convert! I typically buy oat ,almond and soy milks. I don't buy cashew or coconut milk soften but those are the ones I still would buy at the store. The recipe I used to make oatmilk used 1cup oats, 4 cups water and 1/4 cup raw cashews. The cashews made it creamy and perfect for coffee and it foams up in my frother.
