It's great to have you back and with something special to boot. I love cauliflower and get rather annoyed that they cut off the greens and throw them away. What a waste of a cabbage like veg! As for the stalk, I never cook or use that. Cook's treat to be eaten raw! Iceland does a really tasty, good value gammon with a honey mustard glaze, and I always have some leftovers when cooking for two. Cubed about the same size as you did, it can be used to lift many vegetable dishes to meal status. Cauliflower seems to freeze well and can be bought quite cheaply, although it doesn't have the greens, so I use peas. As for the cheese sauce, I have always used one of the lower salted (sometimes they say slightly salted) with about 1% salt and have never had an issue (I dislike over salty food). I generally use ordinary onions sliced lengthways. I start them off in a frying pan with a little water and sprinkle stock powder over as well as a little oil. The water dissolves the stock and coats the onions as the water evaporates, leaving the oil to fry and give as much or as little colour as you want. I add in the cooked meat, which just needs warming through. I place the contents along with the just cooked peas to the bottom of a heatproof dish, add the cauliflower, cover with the cheese sauce, and plenty of grated cheese. Rather than putting it in the oven, I place it under the grill to brown. But don't ask me which method uses the least electricity. I like the idea of making the sauce in the pan used to cook the meat and shallots, I imagine that it also adds a flavour to the sauce. However, I always weigh equal quantities of flour and butter and melt the butter first. I find that a quarter cup of milk added at a time is a good quantity to avoid lumps. As my mother, who taught me to make a white sauce, said, " Never trust a cook who says the lumps will work out in the end - just keep stirring until smooth BEFORE adding anymore milk". P.S. if cooking for four, I would use the same pan as you (great, aren't they) and pour the cheese sauce over. Looking forward to your next instalment.

Oh hell this brings back memories of me having a sausage roll in a cafe many years ago. I was so hungry that I got stuck in - it was roasting. I took a quick gulp of coffee to cool the whole show down just for the boiling hot coffee to kick in. I have NEVER done it again. You only ever do that once!! 😓😤😫🥵😭

Great to see you back with another great recipe. This was always a main meal when i was younger, i didnt even know that it was considered a roast dinner side dish until i started working in care at the age of 23/24.
I love cauliflower - I cook it the way you did here; also you can just pour some cream over bits of cauliflower (add what you want or just pepper) and cook in the oven. I also use cauliflower to thicken vegetable soup. So many people turn their noses up at this vegetable and its so good for you. Have a great 2024 Adam 😀👍
Excellent! Never thought of using chorizo in it - I do sometimes mix in sprouts and any other greens hanging around, but somehow never the leaves. And I always use a lot more mustard than that.
I've never made Cauliflower Cheese with Chorizo. I like to keep mine simple and just use a bit of nutmeg. Might give Corizo a go though. Thanks for the video Adam. It's always good to learn something new.

I think it’s one of the nicest things amongst all the winter veg one can roast in the oven, just on a tray with oil and seasoning. I don’t mind it raw with dip on a snack tray, but roasting transforms it to a real beauty.
Tried this tonight, even adding the crisps. Swapped the English for Dijon mustard as a preference, and its an absolute belter! Thanks for recording this.
definitely going to try this one, thank you! never used to see cauliflower cheese as a side before moving to England, was always a main event as far as I'm concerned, and used to crush up crisps and grate extra cheese over frozen pizzas as a teen and it really did make it a different beast. Amazing dish. Cauliflower with cheese is the only way to go. I never liked cauliflower until my mom made it with cheese. Can’t find the hard chorizo where I live in TX, just the squeeze tube crap. I’m going to use smoked sausage. Thanks for your great content.

Though I haven’t seen cauliflower cheese with potato here in America,broccoli cheese is very popular topping for a baked potato (jacket potato).Wendy’s fast food has sold them for years,also chili cheese topped ones,I don’t know if the UK Wendy’s offer them.😊
Thank you for the sausage skinning tips and the method of using the cauliflower leaves. Not many leaves on the grocery store product sold here in British Columbia, Canada. However more leaves come with farmer's market veggies. I'll use some of my precious supply of white pepper. Remember white pepper is usually much stronger tasting than black pepper so use a tame quantity. Nice topping with the potato chips "crisps".
My Gran taught me how to make this - but as she was born in 1911 (AD I think) she'd never heard of Chorz-chorrit- Fuckit., spicy italian sausage. Living with a vegetarian for years, never thought of using it before (made it dozens of times). Thought you were using her food timer method at one point - it's ready when the smoke detector goes off! (Always added nutmeg to mine - freshly grated, S'nice).

I absolutely bloody love cauli cheese, I've done it with Chorizo (and I do say it correctly lol) and it's yummy. I was drooling till you put the S&V crisps on it, no no no, crisps ok maybe cheese and onion or plain but not feckin S&V they make my face go funny and it's funny enough as it is!! Ah! Cauliflower & cheese. Haven't eaten it in absolutely ages so will definitely make it soon. At first, I'd no idea what you were talking about when you first mentioned the sausage but when I saw it, I said it's chorizo "SHO REE ZO" that's how we pronounce it here in France. A nice, spicy sausage to add a little punch to the quite bland cauliflower, great idea. Never thought of sprinkling over the top of the cooked dish crushed crisps, so thanks for the tip. I love cauli cheese, its such a great dish. I find it works really well as the main veg to go with roast gammon. I've not tried adding Chorizo which I normally add to mac n cheese. It's such a great veg.

Oh I have many. Cheesy chips and gravy, spaghetti with lemon butter, spaghetti with chilli and garlic. In the summer I'll have something like a caprese salad. Bacon buttys, a plate of cheese and crackers, pasta bakes. So many. Pretty much anything that's quick and easy 🤣

I love that will try it, got one for you to try peel cube and boil 4 large spuds cook 4 rashers of smoked bacon till well done and crumble it, fry 1 onion and 1 diced garlic clove with a tea spoon of chilli powder let all go cold then mix together in a dish, cover with a very cheesy sauce and bake till done , its fantastic . please give it a go.
Mate, you've delivered another absolute BANGER! Anyone umming and ahhhing over making this should just crack on and go for it. One minor hiccup at my end was Satansbury's delivering a cauli the size of an orange and spring onions instead of shallots. However, I swapped in a head of broccoli and it all worked out fine. The salt-n-vinegar crisps were a revelation!

Everything is better with cheese. Cauliflower no exception. I'm quite content eating steamed cauliflower with bearnaise sauce, if there is any... I'm a simple, simple man. Need to try this dish though. Looks delicious!
My cousin sister forced me to have Brussel sprouts in cheese with bacon....but I loved it. While watching this video I just remember her. I'm not fan of Brussel sprouts alone 😂.
Extra mature cheese saves money, it has so much more flavour you only need use half the amount used of medium cheddar, less fat too. I always add mustard to any cheese sauce as it intensifies the flavour of the cheese, more money and fat saving. My wife has suddenly decided she no longer likes Chorizo, so I'll give it a go with smoked bacon instead. It won't have that lovely golden fat but it will give a meaty chew and saltiness.
Adam - when i lived in London - meat was so dear that cauliflower cheese was often our main course! (Served with Woolies/Safeway home brand instant mash!!). I had meat only twice the whole time. This looks do good. Great to see you again mste...i hope you are coping okay.

I love cauliflower cheese as a main dish too. Rich tangy cheese sauce, and thick buttered brown bread - has to be brown IMO ! I also love the cauliflower hearts (along with cabbage hearts and brocolli stems), eaten raw, delicious - throwing them away is a crime!!!

Cauliflower cheese is a much more popular dish in the UK than in the US.Cauliflower is having a moment here as a low calorie meal,things like cauliflower rice,and cauliflower steaks,even cauliflower tots.Also chorizo isn’t as popular either,we have both Spanish,and Mexican,which is often found like minced meat,it has a sour note from lime juice,and I love it.The Spanish kind has lumps of fat in it,so as I can’t stand that sort of thing I don’t eat it,in fact I don’t eat most sausages because of that,nor fat on meats,chicken sausage are the exception as they are a finely ground sausage.Thank you for the recipe,and all your recipes.I am making Aloo,gobi tonight,a bit of a coincidence.

Nutmeg is a wonderful spice. Also pretty much indestructible. I've got nutmegs in my cupboard that are literally years old and still fine 🤣

Ah! Cauliflower & cheese. Haven't eaten it in absolutely ages so will definitely make it soon. At first, I'd no idea what you were talking about when you first mentioned the sausage but when I saw it, I said it's chorizo "SHO REE ZO" that's how we pronounce it here in France. A nice, spicy sausage to add a little punch to the quite bland cauliflower, great idea. Never thought of sprinkling over the top of the cooked dish crushed crisps, so thanks for the tip. Have subscribed to your channel, not forgetting to wish you a happy New Year, it's still time, I hope. Here in France, we can say it to folks up until the end of January but by that time, you feel like a broken record.

I love cauli cheese, its such a great dish. I find it works really well as the main veg to go with roast gammon. I've not tried adding Chorizo which I normally add to mac n cheese. It's such a great veg.
Hi Adam thanks for this , I love my cauliflower i shall be giving this a go ., well I've had to laugh thought it was only me who had a gripe about people pronunciation on chorizo lol especially when adding the letter ( T ) in it .
I gave up trying to explain how it's pronounced because I just sound like a nob 🤣

You can never go wrong with the classics. Cottage pie, bangers and mash, toad in the hole, a good Sunday roast. Brits eat best in the winter I think. Good hearty warming food

When I moved to Texas as a kid I learned broccoli cheese rice casserole and broccoli cheese soup are, indeed, delicious.
Definitely broccoli cheese works,even better than cauliflower,more taste to broccoli.

Oh I have many. Cheesy chips and gravy, spaghetti with lemon butter, spaghetti with chilli and garlic. In the summer I'll have something like a caprese salad. Bacon buttys, a plate of cheese and crackers, pasta bakes. So many. Pretty much anything that's quick and easy 🤣
That looks great I will give that a go except for the crisps would that freeze as I'm the only one in this house who likes cauliflower it would be great if I could freeze small portions for future meals, atb john.

I love that will try it, got one for you to try peel cube and boil 4 large spuds cook 4 rashers of smoked bacon till well done and crumble it, fry 1 onion and 1 diced garlic clove with a tea spoon of chilli powder let all go cold then mix together in a dish, cover with a very cheesy sauce and bake till done , its fantastic . please give it a go.
Mate, you've delivered another absolute BANGER! Anyone umming and ahhhing over making this should just crack on and go for it. One minor hiccup at my end was Satansbury's delivering a cauli the size of an orange and spring onions instead of shallots. However, I swapped in a head of broccoli and it all worked out fine. The salt-n-vinegar crisps were a revelation!
Oh my goodness Adam, I always put crisps on top of my colly and cheese, I do the same when I have made chicken pasta and cheese sauce. Ooooohhhh yummy yum yum

Alright mate, I was just saying to our goer Keef that his cheese flan was a great way to get rid of all the xmas leftover cheese! and I thought this would be a great addition to my meat free Mondays until I saw Choritzo! Is this ingreadient optional or is there anthother thing to add that would make it just as insane? (veggie)
You can absolutely leave the chorizo out. You could replace with some roasted red peppers instead
Where I live I can get a delicious vegetarian version of chorizo and I think I'll be adapting this recipe to include it.@@Adam_Garratt
Everything is better with cheese. Cauliflower no exception. I'm quite content eating steamed cauliflower with bearnaise sauce, if there is any... I'm a simple, simple man. Need to try this dish though. Looks delicious!

My cousin sister forced me to have Brussel sprouts in cheese with bacon....but I loved it. While watching this video I just remember her. I'm not fan of Brussel sprouts alone 😂.
Extra mature cheese saves money, it has so much more flavour you only need use half the amount used of medium cheddar, less fat too. I always add mustard to any cheese sauce as it intensifies the flavour of the cheese, more money and fat saving. My wife has suddenly decided she no longer likes Chorizo, so I'll give it a go with smoked bacon instead. It won't have that lovely golden fat but it will give a meaty chew and saltiness.

Adam - when i lived in London - meat was so dear that cauliflower cheese was often our main course! (Served with Woolies/Safeway home brand instant mash!!). I had meat only twice the whole time. This looks do good. Great to see you again mste...i hope you are coping okay.

I love cauliflower cheese as a main dish too. Rich tangy cheese sauce, and thick buttered brown bread - has to be brown IMO !
I also love the cauliflower hearts (along with cabbage hearts and brocolli stems), eaten raw, delicious - throwing them away is a crime!!!

I have always used equal quantities and have never had a lumpy sauce yet. Although the higher ratio of butter might give a creamier taste.

Cauliflower cheese is a much more popular dish in the UK than in the US.Cauliflower is having a moment here as a low calorie meal,things like cauliflower rice,and cauliflower steaks,even cauliflower tots.Also chorizo isn’t as popular either,we have both Spanish,and Mexican,which is often found like minced meat,it has a sour note from lime juice,and I love it.The Spanish kind has lumps of fat in it,so as I can’t stand that sort of thing I don’t eat it,in fact I don’t eat most sausages because of that,nor fat on meats,chicken sausage are the exception as they are a finely ground sausage.Thank you for the recipe,and all your recipes.I am making Aloo,gobi tonight,a bit of a coincidence.
