If the cake is kept close to heating element, it will cause more browning on cake top turning the nuts darker in colour. Here I have kept it in middle rack so they remained close to their original colour.
Yes you can use jaggery instead of sugar. Wheat flour absorbs more liquid than maida, so you may have to increase the quantity of liquid ingredients to adjust the consistency of batter.

Can I use Thandai paste?
I have not tried this recipe with thandai paste. However the result might not be the same as liquid & sugar ratio will change with thandai paste.
