Tips** the salsa is what makes this recipe 20/10! Don’t skip on the chile morita/chipotle!
Make sure your lid is covered and no steam leaves the pot after adding the eggs!
Ingredients
5 tomatillos
2 Roma tomatoes
3 guajillo
2 chile morita
3 garlic cloves
3 medium potatoes
2 lbs skirt steak salt I used 1 1/2 tsp & 1 tsp bp
2 small diced tomatoes
1/2 small diced onion
1 small diced jalapeño
1 cup water
Eggs

Just watched your television interview and I just want to say that I’m proud of how far you’ve made it. I would like to thank you for being a great influence in my woman’s life. I remember going to work with No LONCHE she didn’t know how to cook and that didn’t sit right with me, it was either I leave her or mold her into the woman I want her to be. My favorite breakfast growing up was a pan bolio filled with scrambled eggs refried beans with Chihuahua cheese. There might be nothing in the fridge but Mom always managed to make something out of nothing. Love you Mom!

I was remembering my Tia Tencha just yesterday. Didn't matter what time we arrived to the rancho, she'd whip up some frijoles, tortillas and a bit of fideo or sopa de arroz GOODNESS such good food❤. How I miss her 🕊

I made this for dinner tonight and it was incredible!! I used three chipotle peppers since I didn't have the morita chiles, and the flavor was amazing. I ate it with rice :D

Can you suggest other chiles for those of us who want it spicier but who don’t know a whole lot about chiles? You suggested serrano here for the stuff in the pan but not for the salsa. Gracias ‼️

My idea of a quick breakfast certainly doesn't include a using blender (unless for a smoothie) or browning beef.
