The bagels look soooo good … but as a medical lab technician I can't help but notice at 20:44 the shop attendant's wrist-full of well worn and much loved bracelets with dangly pendants making contact with the slab of smoked salmon each time she cuts some for the customers. Wearing gloves that aren't high enough on the arm(s) is merely defeating the purpose.
This was so much fun for me to watch, and I showed it to my partner when it came to the kettle…putting the malt in it and then dropping the bagels in…the entire process from putting the bagels in the kettle on to the end was what I did when I worked at a bagel bakery in college. That was a fun job with a fun group of people.
I don't guess that she is sanitizing her bracelet to the core every day and then the contamination goes its way. 🤢 Next time you are having a salmonella infection, you know where it comes from 😂

In nursing school that is taught as a big NO NO right along with NO Dangly jewelry and hair off of shoulders and away from face.They teach the same even in basic food prep course. Can't believe people are defending the Lox slicer wearing SEVERAL dangly bracelets that is obviously touching the food every time she handles it. I originally had a problem with the long sleeves touching the food, but hopefully they are putting on a clean coat every day (I somehow doubt it) The only accepted jewelry to wear by Servsafe is a plain band wedding ring, NOT TO MENTION the bacteria but the safety of getting caught and causing harm that way so she is in violation. Probably has gone nose blind to smelling like Salmon all day and doesn't notice her multiple bracelets are oily and smell like gravlox.

Maybe they taste good, maybe they don't. But as a native Montrealer, I have to say that a *real* bagel is hand-rolled, baked in a wood-fired oven and has no discernible top and bottom. If one side looks flatter, it's not the real deal.
I agree 1000%. Real, Authentic bagels are hand rolled. I grew up on Authentic bagels, lived right down the block from both a bagel and bialy bakery, ALL hand made & superb, the real way.

It's pretty easy. Just be sure and splurge on quality malt.

Keep them low in the oven. Heat rises, so low and slow until they bake on, then a quick bake near the top

The doug should not be touching the employees clothes. It's an antisanitary procedure, and this is not a home kitchen.

Можно вопрос: а где вы увидели масло? Я видел кипящую воду, в которую добавили мальтозный сироп, что даст при выпечке ровный карамельный колер. Так поступают при выпечке бэйглов, турецких симитов, что, собственно, и есть частью технологического процесса. Да, это не бублики (если вы досмотрели ролик до конца, то в месте их реализации на ценнике написано "бэйгл"), но в масло их никто перед выпечкой не бросал )))
