    For really good oven wings start them on a low temp of 225 for 30 minutes then hit them with a high heat of 425 for around 40 minutes. You'll get a wonderful crunchy skin with a juicy flavorful wing

      I like to cook them until they're crispy and caramelized then sauce them and then put them back under the broiler to make the sauce all gooey and caramelized then take them out and give them a bit more sauce

    One thing for sure...nothing beats deep frying. That's the best way to get the skin crispy enough (without over-drying) so that it stays crispy after getting covered in sauce.

    I smoke mine for about an hour then throw them into the deep fryer for the crispiness you want out of the wings. I don't sauce mine though, I like them dry and then dunk them into the sauce. Otherwise, the sauce starts taking away from the crispy skin.

      @@tomkavanaugh1120 sorry, I always make my wings dry and then dunk them in sauce instead of covering them with sauce. This way, it keeps them crispier, as I like the skin to be super crispy.
      Yes, just salt and pepper is all I use to season with when I throw them on the smoker.

    Regarding the feathers: Years and years ago, my father received a Schick electric razor. He didn't like it and continued to use his Gillette straight razor. My mother bought a chicken and. as was common those days, it (the chicken, not my mother) had a load of pinfeathers all over it. She (my mother, not the chicken) didn't have the time to pluck the chicken, as she had six children to contend with. She had a lightbulb-over-the-head moment and retrieved the Schick and took care of the offending feathers in just a couple of minutes. She was so amazed that she wrote (you had to write in those days. I know!) to Schick and explained what had happened. They were so impressed that they sent my mom a whole bunch of Schick products, AND introduced a new product. So, they had the Man Schick, the Lady Schick and the Chicken Schick. Just a bit o' history.

      My thing is people are always talking about buffalo wings with no credit to buffalo NY where they originated from Philly gets there props for their cheese steaks NY City for their pizza but people never mention buffalo for there wings or sauce nobody makes buffalo wings like buffalo we don't even cook them like that but they look good most people have no clue how to make a real buffalo wing neither do they know the difference or secret of making them lol

    The best way to make wings is to fry them, sauce them, toss em on a hot grill (caramelize first layer of sauce and get grill marks) then toss them in sauce a second time. Also dry brining them before grilling, roasting, smoking is always a great idea.

      To be honest, they are all soggy now that they've all been soaked. You gotta do a light breading, deep fry and only apply sauce at the moment you serve, anything else is amateur hour.

    When making sauce like that, don't let it boil. Once the butter breaks, the sauce goes from creamy to oily. You wanna keep the butter emulsified.

    I always double fry my wings, that way the oil heats back up to 350, and you will get a nice crispy skin.

    My first ever thumbs down to you Sam . Didn’t get the wings crispy enough . I can give a pass on the smoked ones . But you really botched it on the deep fried ones . Way way way under cooked by authentic Buffalo style wings . They gotta be extra crispy cuz the sauce always softens them up . Ranch ???? Sacreligious !     Was a bit confused on the oven baked. You said 40 or so minutes at about 400 F, flipping at 20 minutes.
    Did you skip the flipping? The video kind of made it seem like you pulled them out after 20 minutes and then put them straight under the broiler for 5-7 minutes.

      if my traeger is set higher than 180 , there's rarely any noticeable smoke. the taste is def there tho!!!

      If the smoker is operating correctly you really shouldn't see a ton of noticeable smoke. A ton of white smoke looks cool (i guess) in peoples UA-cam videos but is a sign that something is wrong

      If your smoker is putting out white smoke, it means you have a dirty fire which makes the meat taste terrible

      We bought a camp chef grill. We only see smoke when we set it on high smoke. If you listen to the background it sounds like a mini jet. Good stuff, we use competition blend.

    As a Buffalonian these are not Buffalo chicken wings. And we never call them Buffalo wings. They are simply chicken wings or "wings". Deep fried and covered in Frank's hot sauce with some butter and shaken. The less butter the hotter. That is it. These look good but they are not Buffalo style wings at all.
