i recently made this for my bf and i for valentine’s day and it turned out DELICIOUS, but the filling turned out a bit runny. i used room temp eggs and fridge-cold full fat marscapone, and the lady fingers were definitely not over-soaked. was still really really tasty, but i’m wondering if you have any tips so it’s not as runny next time i make it? thanks :)
You can omit the rum if you don’t want boozy tiramisu! I’d just add some extra vanilla extract (I’d do 1 teaspoon) to the coffee to give it some flavor and up the amount of vanilla in the mascarpone mixture to 2 teaspoons!
I’ve never tried it, but you could try swapping out the mascarpone for a high quality cream cheese and a little bit of cream-for this recipe I’d do 12 ounces cream cheese and 1/4 cup cream! You’ll want to mix the cream cheese and cream together to fully combine before adding in as directed. Mascarpone is such a key ingredient in tiramisu that switching it out would change the taste and texture so just be aware of that!

mascarpone cream doesn't need to be cooked. Its the raw eggs you're probably seeing being "cooked". Mascarpone cream is just cheese already curdled.
