  • Making a Pourover Inset - These take a little explaining, so here goes.
This is an idea that's new to me. Some of you might remember me asking a few weeks ago about the size of the hole through the base of pourovers you make/use. This was because someone who had bought one of my pourovers was finding that it occasionally spluttered and sprayed coffee sideways, despite the sharp cutback lip I add to the bottom. The interesting thing is that it doesn't happen all the time, and doesn't happen when I use mine, so I wasn't really sure what was causing it.
This is where @decent.pizza (who knows about these things) very kindly explained what I was missing, which is that pourovers and drippers aren't exactly the same thing. As I currently understand it, with a pourover you're looking to control the flow of coffee by adjusting the grind. A finer coffee will pass through slower, so you adjust to get the brew that you want. With a dripper, the piece itself slows the rate of flow by using smaller holes. This lets you get a decent brew with a course grind.
If you use a course grind on a pourover like mine then it can flow through faster than would be ideal, making a weaker coffee and potentially spluttering as it comes out.
So, these are removable stoppers to convert my pourovers into drippers. This means that you can pick which you want depending on what coffee you're using. They're thrown with 10g of clay, left overnight, then a hole is drilled through them and they're cleaned up when they're leather hard.
I don't currently know what the correct sized hole is going to be, so there's a little more testing to do, but hopefully this helps anyone else who was also wondering how to make a better pourover.

Hello I have tried to do things like that inserts but they keep sticking to my little bisque thing I put them on and are ruined. How do you do that? I mean glaze the insert without it sticking

I wipe the glaze off the bottom with a sponge, and make sure not to apply it so thick that it runs
