- In honor of the Year of the Rabbit, here is a recipe for rabbit fish cake decorated and Ozoni( Japanese Rice Cake Soup)
May it be a year of leaps and bounds☆☆
■Ingredients (for 2 persons)
80g chicken (breast or thigh)
2 shiitake mushrooms
fish cake to taste
Spinach to taste
600ml Japanese soup stock
3 tablespoons soy sauce
1 tablespoon sake
2 tablespoons mirin (sweet sake)
rice cake to taste
■Directions
1. Cut chicken into bite-sized pieces, remove the stones from the shiitake mushrooms and cut them into decorative pieces.
2. Pour soup stock into a pot and bring to a boil, then add 1.
3. When the meat is cooked, add spinach, soy sauce, sake and mirin.
4. Bake the rice cake in a toaster oven.
5. Place on a serving dish and top with fish cake.■
