2 minutes is jersey mikes standard for cooking a single philly so yea this is about normal, prob could have shaved off a few seconds if he used tongs to put the steak on the grill and avoided the glove change
The trick for a good steak is not to cut it too fine. Each piece should be about the size of your thumb. I'd skip the first cut and only do the cut with the veggies.

Little bits just taste like metal grill. Bigger pieces taste like meat. So basically, you’re wrong on all counts.

As a cook, I couldn't tell you what the appropriate amount of cheese is for a proper philly, but I also thought it was a bit low. Then again, I've never cooked a philly professionally.

If you eat it immediately then sure! Lots of flavors going on there for sure but I see it done almost everyday

You gotta chop the cheese with the meat so it all gets melted and gooey, and all over the meat instead of just resting on top
