Salsa Verde ~ Water Bath or Steam Canning

  • Make this yummy Mexican condiment with tomatillos or green tomatoes. A perfect dip for tortilla chips, slather on grilled meat, top your favorite taco or use a base for salad dressing.
    5 c. chopped tomatillos or green tomatoes
    4 c. chopped onion
    2 c. total green chilies or peppers (I used pablano, cubanelle, green bell, jalapeño)
    1 c. bottled lemon or lime juice
    6 cloves chopped garlic
    1 T. ground cumin
    3 T. Mexican oregano
    1 t. ground corriander
    1 T. salt
    1 t. pepper
    Ladle hot salsa into hot pint or half-pint (8 oz) jars leaving 1/2" headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
    Process for 15 minutes in boiling water or steam canner, adjusting for altitude as follows:
    1,001-3,000 ft ~ increase processing time by 5 minutes
    3,001-6,000 ft ~ increase processing time by 10 minutes
    6,001-8,000 ft ~ increase processing time by 15 minutes
    8,001-10,000 ft ~ increase processing time by 20 minutes
    Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

    I made this in the morning. I smoked the peppers, tomatillos, onions on the grill with cherry smoke wood. It was so good I went to the store and got more to make and can for tomorrow. This is definitely going into my Holiday Gift Baskets for my friends.

    I use the Ball Green Tomato Salsa Verde recipe. I have to make a triple batch every year. Sooo good! My boys love it when I use it as an enchilada sauce.

    I absolutely love salsa Verde and chili verde. Last year I made both. I am in SC and don't see tomato poor very ofren. I love a New Mexico hatch in both. Great recipe.

    We got enough tomatillos to do a double batch. You made it look easy, but I wouldn’t make all that mess for a single batch!

    I use the Ball Green Tomato Salsa Verde and love it because you can adjust the spice and peppers to your liking. I ended up doing a triple batch and the last 3rd of it I did puree and can it and it came out just fine but I did leave it in for a additional 10 minutes due to the density factor.

    I really liked this recipe! I have puréed it in the past but it does seem safer to use my immersion blender when I'm ready to serve it. Great video as always sister! ❤️

      Storie -Check the Roasted Salsa Verde recipe in The All New Ball Book of Canning. The instructions say to: process roasted vegetables and garlic through a food processor until smooth! So, maybe possible???

    can I use red pepper flakes or cayenne pepper as one of the spices? I don't have any fresh hot peppers but do have loads of green bell peppers.

    I'm excited to try this with all my green garden tomatoes. I am very new to canning and have an old steam canner, did you mention how much water to put in the bottom of the canner? Does that amount matter? When I canned my plum jam, I just filled up the bottom portion almost complete. Its a three piece pot style. Should I measure the water instead of just filling it up? Thank you for your advice.

      Carla Clark hi! You really should go by manufacturers instructions. If you don’t have the manual you could check on line. For my steam canner it’s 3 quarts. Welcome to the canning addiction 😍

      Mark & Kristy Nichols hi! Sorry but I can’t recommend doing that. The water content from fresh herbs can alter the acid in your jars making it unsafe

    Hi,If I use green tomatoes.Do they need to be peeled.I looked in the usda book and it just says that green tomatoes can be used,but doesn't say about peeling them.Thank you and love your channel

    Good morning ,
    I have a question regarding steam canner and water bath canning I only have a steamer Canner , with all of my water bath still be safe if I use the steam canner.

    I learned the hard way when cutting up jalapeno peppers. I make sure I use rubber gloves now. It really burned my hands for hours.

      No, anything pickled should be water bath canned

    Can you use fresh oregano? I have fresh Cuban/Mexican oregano that I grow. But it is quite a thick leaf. So I don’t know if it makes a difference if you cook it fresh. It’s not a little tiny leaf like Italian oregano. Of course I would chop it as small as possible.

      Kathy Jenkins hi! Unfortunately I can’t recommend doing that. Fresh herbs have water in them. The extra moisture can possibly change the ph in your jars making it unsafe. Fresh herbs are never recommended for canning unless you’re using a tested recipe calling for them 😊

    The recipe says 1 tsp of black pepper and in the video you say 1 tablespoon of pepper….I am making this right now so I am hoping 1 tsp is the correct amount

      In the description she links to the website that has the recipe. It calls for 1 teaspoon.
