Great cook. There is a no salt version of that rub. I love to dry brine my trip with kosher salt and then sprinkle the non salt rub before I put it in the smoker. So good.

no kidding, haha! Wife was weirded out at first but became a fan when she ate it. She threw it on some asada the other day too. there's a lot of it in the shaker so now I am gonna throw it on everything.
I pull at 118 just like you with indirect heat at 325. it carry over cooks over 5 minutes to 130 or so. I sear first on cast iron.
i've been wanting to do a cast iron sear, I keep forgetting!
