JM Guillon's wine 06 I know. Heavy style and jammy for me... techno and overworked, i.e. vulgar style. Not much to say about that...
Two years old gevreys straight after opening... not the right way of drinking them!
You open and drink it immediately... I am french so my english is frenglish.. sorry. But these kind of wines (burgundy) when they are well made are tannic and reduced. They defintely need oxygen so that grape tannins polymerise. One also needs to drink them the right way, keep the wine in mouth and swallow air to mix with wine... Not so straightforward to get the best of these wines.
Yes I do let it breath.. Sorry it seems that I was not clear. It is an absolute requirement with such wines. It seems that our friend in his video drunk a much too young Gevrey wine and do not open it in advance before drinking.
Decanting is often a bit violent. If you have time, just open in advance. Taste, if not ok wait... Use suitable glasses.

03 was way too warm! Burgundian wines do not taste good on that vintage...
2003 was a very good year. I taste a "Bourgogne" from this year, so a simple "appellation" and woaw! 6 bottles of nectar. i was not ready for this !
I have hand-made myself cherry juice, very fresh. However, it was not very exciting, so wine having that palate to me is not particular good PR.
