Dredge the ossobuco in flour, removing the excess. Heat a large pan with plenty of oil, then add the ossobuco and brown it on both sides over a high flame. After browning the meat sufficiently, add white wine, then add a sprig of rosemary and a clove of garlic, let it flavor for a few minutes. At this point, pour in the meat broth to cover the ossobuco, cover with a lid.
Continue cooking for at least an hour and a half over low heat, if the broth reduces too much, add another ladle. At the end of cooking, a cream will form to serve on top of the meat. For the final tasting, grate a little lemon.
Ingredients for 4 people:
A kilo of ossobuco
Flour to taste
Oil to taste
A sprig of rosemary
A clove of garlic
Salt to taste
A glass of white wine
