If you have been craving a creamy milk chocolate fudge that is sugar free, keto, gluten free, and most importantly tastes like a real good old fashioned, home made fudge, then you will love this recipe. This tasty fudge is easy to make and is based on my sugar free sweetened condensed milk recipe, and my chocolate truffle fat bomb recipe. Each of these two separate parts is very easy to make and the entire recipe can be completed in less than 30 minutes.

My sweetener re-crystallized in my batch of condensed milk? Did I over heat it when reducing? Can I fix the condensed milk by reheating it gently? Thanks- as a chef I appreciate how well put together your recipes are. Great job keep it up.
Hi Kyle! I find that when my heat is too high, even by just a little bit, some crystallization remains, so using very low heat, cooking "low and slow" is how to get the best results. Yes, you can re-melt and reduce the crystallization by reheating on VERY low heat, and stirring as it is melting.

Hi Shirley! Your question put a big smile on my face. I have to confess that I have been working on a cookbook for two and a half years, after a publishing agent approached me about three years ago. I have been struggling because I want really good recipes based on classics that are nutritious and especially are very tasty and satisfying, but would be delicious also for people not on a keto diet, such as family and guests. Half of my family is not keto, and I want them to really love the food, so I test all of my recipes on them as well. Because of work and life obligations, this work has been coming along much too slowly, but I am getting near the number of recipes I need for a published book.
However, we are putting together some e-cookbooks, compiling the recipes together from those already on my channel, to make it easier to use. That is why I asked how many people you cook for usually. Any guidance that you can provide on what you would like in a cookbook would be most helpful and appreciated.

I think an obvious next flavor for a fudge would be a chocolate hazelnut (nutella) flavor. And maybe a homemade nutella recipe as well.

By the way, if you can't find the premade hazelnut butter, in the video I explain that you can dry roast the hazelnuts, remove the outer skin, and grind them to a butter yourself.

Please how much chocolate mixture is left over? I forgot and put it all of it into the condensed milk mixture. If I know the chocolate amount left over, then next time I 'll make more condensed milk.
Hi Rosalyn! About half of the chocolate truffle mixture is left over, so if double your sweetened condensed milk, you can make twice as much fudge. Oh, yum! Now I want some :) Cheers!

How can we increase the shelf life of this fudge
Hi Rutuja! There are no preservatives in the fudge, so as you are aware, you cannot leave it on the counter or in the fridge for very long.
The good news is that this fudge can be frozen, if kept in an airtight container, and will last for several months without losing its flavor.

Please about the chocolate mix ingredients - I weighed 12 grams of unsalted butter but it looked less than 2 tablespoons. Is the 12 grams figure correct or perhaps it should be more?
Hi Rosalyn! Thank you for noticing that the 12 grams seemed incorrect. I think I made a typo - it should be 30 grams - each tablespoon of the butter and the MCT oil weighed 15 grams, so the total is 30 grams for 2 tablespoons. In the next month or so, I will be posting two videos, a vegan chocolate truffle, and then the vegan version of this recipe. Obviously, the technique is similar but the specifics for the chocolate truffle and the resulting fudge are with a different formulation than just a straight substitution, in order to get the best taste and mouth feel. When I was little, my Dad and I used to go out to pick berries, or fish, or explore in general, and on the way home, he would always somehow manage to drive by Aunt Sally's General Store, and she made the very best Peanut Butter Fudge in the area.
