Chinese Regal Beef Recipe

    Serves: 4
    500g thinly sliced beef
    11/2 tsp bicarbonate of soda
    Marinade:
    1 tablespoon Shaoxing wine
    1 teaspoon chinese black vinegar
    1 teaspoon toasted sesame oil
    1 teaspoon salt
    1 teaspoon granulated garlic
    1/2 teaspoon white pepper
    1 egg white
    1/3 cup cornflour/fine cornstarch/rice flour
    Sauce:
    1/2 cup/120ml/ ketchup
    2 tablespoons Hoi Sin Sauce
    1 tablespoon bean chilli condiment
    1/2 cup/110g Raw cane sugar, soft brown sugar
    1/4 teaspoon chilli flakes or 1 red chilli, sliced
    Vegetables:
    1 carrot, match sticked
    100g quartered mushrooms
    handful beansprouts
    1 onion, large slices
    THE CHINESE RICE: x2 people
    130g basmati rice
    1 star anise
    15ml tamari soy sauce
    11g chicken stock powder
    1 grated garlic
    1/2 tsp. Chillie flakes(optional)
    20g hoisin sauce
    15ml chinese rice wine
    into a non stick pan add in the rice wine, hoisin, garlic, soy sauce and heat whilst stirring. get 300ml hot water, add in the stock. add rice to the pan and cover with sauce, add the stock liquid. and star anise and chilli flakes, bring to a simmer, lid on, into centre of the oven gas 5 for 18 mins.
