Chicken Tikka Masala - Super Easy Super Satisfying!

  • Indian Cuisine and flavours have a huge impact in the UK an probably one of the most iconic dishes is Chicken Tikka Masala.
    Tender chunks of marinated chargrilled chicken in a creamy mild sauce with garlic, ginger and spices. Kids and adults alike LOVE this dish. And my chicken tikka with masala sauce is super easy to make at home.

    Ingredients for the chicken tikka masala:
    Chicken Tikka:
    • 3 chicken breasts chopped into bite-size chunks
    • 120 ml Greek yogurt or thick natural yogurt (full fat)
    • 2 cloves garlic peeled and minced
    • 1 thumb-sized piece of ginger peeled and minced
    • Juice of half a lemon
    • 1 tsp ground coriander
    • 1/2 tsp turmeric
    • 1/2 tsp cumin
    • 1 tsp paprika
    • ½ tsp mild chilli powder or hot if you like it spicy
    • 1 pinch of cinnamon
    • ½ tsp salt
    • 1/2 tsp black pepper
    • 2 tbsp vegetable oil
    Masala Sauce:
    • 1 tbsp vegetable oil
    • 1 tbsp unsalted butter
    • 1 onion finely chopped
    • 3 cloves garlic peeled and minced
    • 2 tsp minced ginger
    • 1 tsp garam masala
    • 2 tsp ground coriander
    • 2 tsp paprika
    • 1 tsp cumin
    • ½ tsp cinnamon
    • 2 tbsp tomato puree paste
    • 1 red bell pepper de-seeded and sliced
    • 400 g tin chopped tomatoes
    • 120 ml water
    • 180 ml double/heavy cream
    • 3 tbsp ground almonds
    • 1 tbsp brown sugar
    Serve with
    • Rice
    • Coriander
    • Chillies

    This is a keeper. I've tried many different recipes from different chefs, this is really easy and flavorful. The charred chicken is easy to achieve with your method. Also, there is no yogurt waste which I love. Everything is used.

    Holy cow, I just made this dish tonight (and just had to throw some coconut milk and peas into the mix) and it is the most out-of-sight dinner I've ever made!
    I felt like a GOD! I, in fact, felt a thunderous torrent sweeping low and carrying me upwards, and ever still, towards a fragrant place that exists only in the savory ether, where all meals are delicious, and every dish makes you click your heels and shout!
    A+. Will cook again!

    A tip for the rice, if you are like me and struggle cook good rice, is to buy VeeTee foods rice pots, You can order direct I believe, though you need to a minimum order. Don't buy from Amazon or Ebay because you won't know old the packs are. They have a very long shelf life (I ordered my last batch in April, and the best before date on the pack December. They cook in 2 minutes, and the rice pots should make enough rice for two. They do basmati, long grain and magical thai jasmine options. I particularly find the latter dificult to cook with being to sticky, and this option just works everytime. VeeTee do an option of "Rice Pots" which split into individual portions. They courier deliver, and are magical. To try first, Sainsburys and Asda do the larger packs, and ASDA sell the pots. Other supermarkets may also sell them, but I have definitely seen them there. I would imagine the home delivery is UK only, but they are very helpful on the phone.

    Add a teaspoon of baking soda to your marinade when marinating the chicken. The chicken breasts don’t get dry

    You say to cook the chicken in the oven for 8-10 minutes, but you don't say what TEMPERATURE to set the oven at :(

    Was reading from some top Chef the other day that you should always put Garam Masala in last as if you put it in first it will mute the flavours of the dish at the end.

      Really interesting thanks for sharing. I have found adding it in with the other spices when we are frying the spices off works really well for this dish :)

      I'd say add those spices early so they can cook. Nobody likes raw spices. Indian cuisine is all about toasting spices:)

      Maybe not, cause it can give the raw taste of spices. In our homes, we usually roast some spices in oil and also add garam masala later (but we allow it to cook).

    Question did you grill the chicken or oven cook it. You said grill but put it in the oven.

      most grilles are in the top of the oven

      I believe the US term is broil. Cooking with direct heat from above. This often causes confusion on cookery programmes shared across the pond! Most ovens in UK have a broiler/grill at the top of the oven space, or a separate compartment above the oven.

    Would suggest the spices be mixed in a separate bowl , then add / mix the lemon juice and yoghurt, then add that mixture to the chicken . Your way is much harder !

      Because it was. By an Indian restaurant owner who was trying to come up with something mild for British tastes. You have to remember the British have only widened their culinary range in very recent times. Before that this creamy and sweet dish was about as exotic as they dared to go.

    why do English speaking ppl always say cream? i honestly dont understand what that CREAM is... there are hundreds of white substance in my country that look like that CREAM :|

      Cream in the UK is skimmed from cow milk. you can get single (not much fat), double or heavy cream which as you can imagine is a higher content of fat, or you can buy thick whipped cream. Hope this helps.

    I love your recipes...but in this one, with “some” this and “some” that, the directions are useless! Can you replace “some” with actual amounts? (Tsp, TBSP, cups, etc). Thx!
