I am like you. I learned how to preserve foods by watching youtube and reading books. After I moved to North Carolina, I couldn't find anyone I knew to teach me. This is how I learned. A friend of mine knew how to water bath can and she made apple sauce every year, but she did not know how to pressure can or dehydrate. I told her about it and she now is preserving her foods. This is a lost art and it is certainly good to know. Thanks for sharing!

Got a Presto pressure canner about 7 years ago and haven't stopped. I remember my mom doing a little bit of canning when I was just a young boy, I figured if she could do it then it was good enough for me to learn.

I am learning by watching videos, reading, and I have a ball canning book, I to have noone to teach me. Some goes smooth but some mistakes you just have to chalk up as a learning experience. I'm older now with arthritis but the economy says we must try to do what we can.

I just got a new to me, double stack PC! The person was selling it to help out her Dad that is on dialysis and awaiting a transplant. If I had a jar, I would love to make squash soup with onions and maybe other veggies and it can be spicy like cinnamon and a little sweet or savory with the onions and veggies and it can be creamed or chunked. Lady Loretta

Yaasss! I ❤️ butternut squash, really any winter squash. Id make a butternut squash soup, butternut squash bread (like pumpkin spice bread), a pie, or a soufflé. I don’t eat sweet potatoes or pumpkin but I treat the squash in the same manner as a sweet potato or pumpkin. DELICIOUS!

When i was a young girl in the 60s my mother would take us girls out to the picnic table, cover it with newspaper and say ok start peeling. LOL. After we would roll up the newspaper and be done. Next was the dicing then canning.

Home grown butternut squash flesh is so beautiful. So glad you taught me how to pressure can this year. We have 8 of these big beautiful squash to process this year. I make really tasty black bean butternut squash enchiladas. Canning just takes the mess out of the meal prep. Butternut squash ravioli also comes to mind! Thank you!!
You have inspired me so much. It is now midnight here in Missouri, i just finished canning carrots and potatoes, butternut squash, and chicken stock. Yes I am tired. But I am going to can every chance I get produce. Every time I can something I pull your sight up first, I also ferment food and dehydrate, and freeze. But that freezer won't do anyone any good if we lose Power or have an EMP.

I love butternut squash soup. Last year I saved some seeds to try our hand at growing them. I really was surprised they sprouted, they are now in our garden and growing beautifully! I know they are supposed to store well, but I can’t wait to try this! Thank you!

Okay you can cut butternut squash up and melt your butter in a skillet put it in there over medium heat cook it till some brown sugar and cinnamon on top with a little bit of salt and you can eat it that way you can also make a mashed potato style out of it you can still use the brown sugar and cinnamon Great Dessert there is a cold butternut squash soup but I'm not sure how to make that you could look that up on the lips Channel I'm not seeing three or four other different kinds and I can't remember them all

I add it to my red kidney beans. In Puerto Rico we add cut-up pumpkin and this is a great substitute. Hey, ball canning jars changed the rules while we weren’t looking! No need now to sterilize. Everything gets washed with hot soapy water and kept warm until ready to fill.

Like every other squash, I love mine as a side dish with butter, salt and pepper! It’s hard to beat fixing most veggies this way! Your body loves it, too!! Beautiful!
I love your site, and recipes. I have always cooked butternut this way, scooped out the seeds, turned them upside down in a baking pan with sides and cover the bottom with water. Roasted them for 45 to 60 minutes. The last 10 minutes, turn them over and put a pat of butter and some brown sugar in the hole where the seeds were. My kids would eat the whole squash.

I like to mash butternut squash sometimes and serve it like mashed potatoes (ill add some butter, vanilla, cinnamon, and honey) its easier for the toddlers. Or ill coat them with avacodo oil with salt pepper and my maple garlic seasoning roast them in the oven 450F for 30-40 mins until fork tender.

My mother, Kentucky gal, made sausage, potatoes & butternut squash in the oven all together. Took my husband a few times but now he loves it.

Your butternut squash is beautiful! I would think that after canning it would make some easy and delicious red Thai curry over some of your canned rice. Coconut and butternut and all those spices sound like a yummy combination!
