Hi Lori, my wife's grandmother called the butternut squash "bells". She would bake them till they were soft. Then she would make them into custard filling for "bell pie". The pie tasted like traditional pumpkin pie but sweeter and lighter. Really good!! Try it sometime.♥️👍

Hey Mr Brown, made your soup today, and it was delicious! Thank you! My sister planned to can most of it but people kept just walking in the door and, well, one bowl after another and we were only able to can 3 pints. Better than none, and it was loved by all!
I love the smaller ,younger squashes better,most all the veggies the small okra,too.
Thank you for the recipe. I added one pound crumbled breakfast sausage and 3 potatoes to it and froze the leftovers. So good!

Y’all are our kind of people We love watching your channel. I am a farmer in eastern Colorado and my better half is originally from southeast Missouri. We are pretty self sufficient I do most of the canning and she is the cook. We come in at night and turn UA-cam on on the tv and see if y’all have put on a new video. I do my cutting then rinse in my salad spinner. I just love you and Mr Browns site. Blessings to you both this new year !!!
It's easier to clean leeks by cutting them up first. Then put in a pot of cold water and swish them around good. Drain them. Then put them in clean water and swish them around again. Then drain. Then they are totally clean throughout.
I thought cutting them up first then rinse and drain would be good to get the grit out.

I roast them in the oven whole and then scrape out the pulp. So much easier than peeling and chopping.

I love it but it never gets canned hahahahahaha homemade bread and butter and this soup is gone for dinner and lunch next day! Mmmmm so good.

I just made a batch of this from a different recipe (with sweet potato, apples, onion). I just love butternut squash soup, and prefer homemade over store bought. I'll be sure to try your recipe, too. Thank you for sharing.

About growing leeks. They grow well here in Canada, so heat might be a problem. I start mine from seed in February. I start them in a fairly loose mixture broadcast in the container. As soon as I can work in the garden, usually May, I dig a trench, separate the leeks, you need to tease the little leeks apart and place the about five inches apart in the trench. Move some of the soil to cover the roots. As the leeks grow, gradually bring the soil from the sides of the trench to come up around the sides of the leeks. By the end of the season the trench will be filled up and just keep adding soil to blanch the lower part of the leek. They like lots of water, and some fertilizer. They can be frozen. I clean and slice mine and put them right into freezer bags, to use as needed in soup or casseroles. I make butternut squash as well. I use butternut squash, sauté an apple an onion, a bit of cinnamon and some ground sage in butter add the squash and some chicken broth. Cook until tender, purée the lot and add a bit of cream. Yummy. Salt and pepper to taste.
This I will make in the next day or two. I will use onion instead of leeks though. I don't have access to that. I have never had squash soup, but grew quite a few butternut. Canned a dozen pints cubed from just one big one. Thanks for showing us this Miss Lori. Update: making it now and almost ready to blend and get it in the canner. Thanks again. Love your channel. I've made Squash Soup, Carrots and Pumpkins. Didn't think to Can it. My daughters saved the Seeds, Roasted them and add to the Soup. Adding your Recipe to my Fall/Winter Stock. Now I need to make that CiderCream Topping.

You dont know how thrilled I am to see a recipe that has been pureed prior to pressure canning. Many recipe books say the ingredients must be canned in a cubed state. Then ingredients can pureed before serving. Thanks
Yes, your right, I've never had any problems, it's not any different then say, apple butter, so I think they are wrong to a certain extent

Sinndy, I believe that if she was just canning squash, it would need to be canned in its cubed state to be safe due to the density issue. However, in this recipe she is adding other ingredients, including liquids. Hopefully that thins the soup out enough so that, even when pureed, it will not be too dense to safely home can. I think it also helps that she canned this pureed soup in half-pint jars, which will hopefully make it more likely that the heat of the canning process will be able to reach all the way through to the food in the middle of the jars.

I am a foodie too Mrs. Lori. I grew up in a mom and pop restaurant and don't remember ever not cooking. So I must have been very young. I still do good old country cooking because you can't beat it. But I also branched out into other cuisines and gourmet dishes. I still cook a lot at 72. We could probably talk for hours.
