I just wanted to tell you what we had for supper tonight. We are broke. I had gotten a pack of little smokies from the food pantry. I also got a pack of weird fancy hot dog buns. I had some pork and beans in food storage. So, I dug around in the freezer and found a partial bag of seasoning blend. I found a dab of barbecue sauce in the fridge, as well as some of the W sauce. Long story short we had BBQ beanie weenies and I sliced the buns and made bread sticks out of them. Pretty cheap meal. You are a great inspiration to me.❤
I worked in a home once that had garlic bread on the menu for dinner but they didn’t give us any bread except hot dog buns. So I buttered them, put garlic and a little paprika on them and stuck them under the broiler. They were so good that I still do that today with extra buns.
My Gran once told me about a week when she & grandad were young, just in their twenties, & he was sick & could not work for a week. She had 3 old pennies in her purse & behind the clock. That was all they had. They had a small packet of dried split peas in the cupboard. Nearly a loaf of bread. The three pence went on paraffin, milk & potatoes. My nan borrowed an onion from the neighbour & made soup with the split peas. Each day nan added a little more water & a pinch of salt & pepper to the soup to make it stretch to the end of the week. They had thin slices of bread with the soup while that lasted. The other meals were slices of potato with a tiny scrape of the butter they had left in the dish. Everything was accompanied by a cup of tea with a drop of milk. They re-used the tea-leaves to stretch them out. My nan was proud she had managed but very glad when her husband was well enough to work the next week. After that my nan always saved up & tried to keep more money behind the clock for contingencies.

I don't have anyone of my children to call me at all. The hospital knows that they don't care. I get so lonely. But I thank God for you and your family ❤. Love you guys 😇🥰😘💕
The wraps are easier to make if you put them in the oven on a parchment covered cookie sheet. Use the same amount of cheese you used. It takes just a few minutes and you can make several at the same time

I'm surprised you haven't heard of removing lettuce core like that I'm 63 and as a child my dinner chores were setting the table and making the salad 😊 however we were taught not to cut our lettuce because it bruises the leaves but I see chefs do it all the time it's funny how we think or practice differently just in the kitchen , learn so much from your channel , by the way our eldest daughter passed earlier this year my husband enjoys your channel as well , he said you remind him of her and watching you seems to help him with his grief you are a blessing to him ❤❤ so ty😊
Brooke, you're spot on with your information. I'm a T2 Diabetic who tends to eat lower glycemic impact foods. However, I am NOT on any form or fashion of a Ketogenic diet, nor will be. It works for some individuals, but it isn't something I'm interested in. Within a year, I've lost 73 lbs, lowered my A1c to normal (5.1), and my blood glucose levels stay more stable then they ever have. I dont adhere to the ideology of eliminating food groups, even starches, but I do moderate portion sizes of them, and budget my calories/carbs to be able to fit them in my day's totals.

YES YES YES! I was thinking about Keto on your last video. YOU ARE 100% RIGHT. I just got off Keto and I probably can’t think right on Keto. Low Carb is good. BTW: People, Keto is NOT a healthy diet, yes, I am diabetic, have a bad heart and am elderly but I ended up in the hospital for a week because of being in ketosis and on Keto being in ketosis is a good thing.
Brooke I’ve made those cheese wraps they are delicious !! I take and melt the cheese and when I flip it over I pour a beaten egg over it and roll it up , so yummy as a lite breakfast or snack and I sometimes add bacon bits or sausage crumbles to the beaten egg before I pour it over the cooking wrap then roll it up for a lite lunch! So good !! Great video Brooke and I’m glad you spoke up about any complaint you’ve gotten about low carb , I think you do a great job with all your recipes !! God bless ❤️🙏🙋🏻🌈🙋🏻

The cooked cheese like that is also great for taco shells! I used to cook them and hang them over a wide handled spoon that was balanced on two cups. They dry into a perfect taco shell shape! A paper towel underneath catches the grease making them a little less fatty too!
I think you're doing a great job with the low-carb. And you're totally right and what you're saying. I'm a type one diabetic and I need to eat low-carb, which is around 25 to 50 carbs per meal. I'm not doing it to lose weight I'm doing it for the diabetes and you're right on point so don't let anybody tell you you're doing things wrong.
Oh my!!! I made the blt mix for supper last night. You don’t want to know how my cheese turned out, but anyway, I had some low carb small flour tortillas and it was delicious! Today for lunch I made more. I only used half a head of lettuce for two people both times. Ate it as a side dish today with some macaroni salad and a few ritz crackers. Awesome Sauce! You inspired me to go to dollar tree, used your ides of John morel sausages, some knorr fusilli pasta in sauce then added a bit of broccoli and a few carrot coins. All told spent $5 (yes I got the brown crust on the sausages) it was great and so filling. Love ya lady!!

I bought some Roma tomatoes in the store the other day. I grow my own tomatoes but was just curious to compare. Well, Brooke, if you know, you know. 😉 Still, you do what you can, right? This meal looks great. And I would swap apples for fries on a low carb meal plan. Yum! An Apple also has a lower spike in blood sugar than a potato. Celery or cucumber is another crunchy alternative for a side. Great inspiration! 💖

For November I am doing a $100 grocery challenge - So far [ November 8th] I have spent $19 + change. $8.75 of that was three and a half months worth of coffee for my prep pantry. I think some people go on these diets they see on UA-cam or Facebook and have no idea what it's about. They don't talk to a doctor or do any research, just look for the low carb sticker on a product. As you say, Brooke, your recipes are for inspiration and substitutes can be made. Sending hugs.
New subscriber here .. Love your stuff.. From one who also grew up pinching pennies . Make it to pay day meals we we not worried about carbs .. We were worried about filling bellies .. but .. Good on you for these .. One of my sons favorite meals .. He is 43 now . He loved what I called 3rd day chicken.. After buying a roasting chicken you eat it for dinner then , next day for sandwiches . On the third day you take what is left of the chicken and boil it until all the meat falls off the bones .. The Bones make a great stock your going to turn into gravy .. You take a box of corn bread mix and make it up adding the chicken and a can of green peas ... And bake it .. You cut it into squares . make a rue and turn the chicken stock into chicken gravy and ladle it over the cornbread chicken .. Its yummy ..

That BLT Wrap looks AMAZING! My kind of food. Not budget friendly but a little slice of avocado would send it over the top. My Dr said I need to try to incorporate more avocado in my diet so I try to buy them when they have a bag of 7 for $1.97. They are pretty ripe so I have to use them up quickly.
This is great! If you ever have leftover head lettuce, wrap it in aluminum foil. I just found out it's the best way to keep it from going brown. It works!
When I cook cheese like you did, I actually do it on parchment paper in the oven on like 350° I sometimes sprinkle them with smoked paprika or other seasoning. I like to make them about the size of a silver dollar for snacks because I love cheese! Put them in a bag and store in the fridge
I have seen people slump or lay these hot melted cheese wraps over a wooden spoon over a bowl to let them cool in a taco shape. Also I wouldn't put the filling in until the taco wraps are cool so the mayo wont get heated and drip. Great video!

I'm diabetic and am allowed to eat up to 60g of carbs per meal and 30g for my snack.. that's 210g daily.. It's more about the type of carbs you eat.. an apple is healthier than a serving of potato chips.. I love your videos and the low carb videos are awesome!!

You CAN eat apples, veggies etc… 50 carbs per meal is low carb. I’m diabetic and on low carb. I’ve seen numerous dietitians and I’ve been told that every time. Low carb is diabetic diet same thing. I’ve been diabetic for over 30 years and always do low carb 50 and under carb meals.

there are some staples I always make sure I have: eggs, canned meat, rice and frozen veg. that can carry you for a few days.

Make the cheese wraps on a baking sheet in thr oven. You can get a lot more done quickly that way.😊
You could use that tiny little waffle maker you had in the camper for the wraps! And the oven works too. :)
Don’t forget when you are calculating the carbs you subtract the amount of fiber from the carbs and it will give you an even lower carb Count.

I pretty much only buy the little tomatos because they actually have flavor. I can't eat larger store bought tomatos since I grew my own.

For November I am doing a $100 grocery challenge - So far [ November 8th] I have spent $19 + change. $8.75 of that was three and a half months worth of coffee for my prep pantry. About the low carb diet. I think some people go on these diets they see on UA-cam or Facebook and have no idea what it's about. They don't talk to a doctor or do any research, just look for the low carb sticker on a product.

New subscriber here .. Love your stuff.. From one who also grew up pinching pennies . Make it to pay day meals we we not worried about carbs .. We were worried about filling bellies .. but .. Good on you for these .. One of my sons favorite meals .. He is 43 now . He loved what I called 3rd day chicken.. After buying a roasting chicken you eat it for dinner then , next day for sandwiches . On the third day you take what is left of the chicken and boil it until all the meat falls off the bones .. The Bones make a great stock your going to turn into gravy .. You take a box of corn bread mix and make it up adding the chicken and a can of green peas ... And bake it .. You cut it into squares . make a rue and turn the chicken stock into chicken gravy and ladle it over the cornbread chicken .. Its yummy ..

That BLT Wrap looks AMAZING! My kind of food. Not budget friendly but a little slice of avocado would send it over the top. My Dr said I need to try to incorporate more avocado in my diet so I try to buy them when they have a bag of 7 for $1.97. They are pretty ripe so I have to use them up quickly.
This is great! If you ever have leftover head lettuce, wrap it in aluminum foil. I just found out it's the best way to keep it from going brown. It works!

Great to point out the difference between low carb and keto. Many seem to use the terms interchangeably.
you are absolutely right...too many low carb eaters aim at 'zero' carbs...not understanding the concept of LOW carb
When I cook cheese like you did, I actually do it on parchment paper in the oven on like 350° I sometimes sprinkle them with smoked paprika or other seasoning. I like to make them about the size of a silver dollar for snacks because I love cheese! Put them in a bag and store in the fridge
I have seen people slump or lay these hot melted cheese wraps over a wooden spoon over a bowl to let them cool in a taco shape. Also I wouldn't put the filling in until the taco wraps are cool so the mayo wont get heated and drip. Great video!

You could also use the lettuce leaves for the wraps and make the cheese and bacon bits and mayo and a little shredded lettuce for your filling

Try chaffles in the waffle maker. Beaten egg, cheese of your choice, waffle it and use it for a wrap, or sandwich bun.
If you have the money, provolone slices make great bacon substitute. You could wrap salad up in them. Yum😊

I'm diabetic and am allowed to eat up to 60g of carbs per meal and 30g for my snack.. that's 210g daily..
It's more about the type of carbs you eat.. an apple is healthier than a serving of potato chips..

To make a pizza crust, use mozarella cheese. Mix 1 egg with a pound of cheese. Cook on parchment paper in the oven.

Have you tried frozen blueberries? They are usually cheaper and so yummy as a cold treat or to thaw and cook with.
Trader Joe’s has Jicama wraps that are used in Low Carb and keto life style. They are good if baked in oven…get crispy.

You CAN eat apples, veggies etc… 50 carbs per meal is low carb. I’m diabetic and on low carb. I’ve seen numerous dietitians and I’ve been told that every time. Low carb is diabetic diet same thing. I’ve been diabetic for over 30 years and always do low carb 50 and under carb meals.
