Hi Cathal. The Duffey/Duffy tombstone is styled after the Duff family crest. You can see it if you google the coat of arms for Alexander Duff, the Duke of Fife (married Edward VII's oldest daughter).

In medieval times they even taxed windows. The more windows you had the more tax you paid. The rich and noble removed the glass and bricked up to avoid paying it. It's true!

I read the cherubs faces are a depiction of the deceased face. Like a caricature sort of what they resembled with hairstyle and face shape.

Not sure about Ireland but religious budlings are usually tax-exempt. That is, of course unless the buildings have been sold to a non-religious body. Different countries have some unusual tax-loopholes though, so, who knows?
