I changed the corn meal into self-rising corn meal. I searched UA-cam and got the recipe for changing yellow corn meal into self-rising corn meal. By the way, the Mexican corn muffins came out perfect. Thanks a billion!!

@@glorialloyd2774 If you just use flour it will be the texture of biscuits. I’ve never tried it, but you might like it. Typically, cornbread muffins or bread needs corn meal. If u try it, let me know how it turned out.

What if you don't have self-rising cornbread mix. Can you use self-rising flour?
