Hearty Spaghetti Bake! Eat one & Bank One! Noreen's Kitchen

  • Greetings! Today I am sharing with you how I made two fabulous and hearty, spaghetti bakes! I had one for dinner on the night that I made them and I banked one in the freezer for another night of quick and easy, no brainer cooking. I love to do that, cook once and eat twice. I am planning on going into more detail on how I freezer bank for quick and easy menu planning sometime soon.
    I used one pound of angel hair pasta, about 2 quarts of Rick's homemade meat sauce which we had leftover from dinner this past week and I also used the homemade, easy vinegar ricotta cheese that I showed you how to make in an earlier video.
    This is easy as layering the sauce on top of the pasta and the cheese on top of the sauce. I sprinkled a bit of mozzarella and parm on top of everything and covered and baked this for thirty minutes then removed the foil and baked for another 15 minutes in order for the cheese to get browned and lovely.
    We served this with a green salad and homemade garlic toast. Easy peasy and delicious!
    This made enough for the four of us for dinner as well as lunches for three more people. This is rich and delicious and the serving that I dished up for the photo was very large on purpose. If you cut into this, I would recommend cutting into 8 portions instead of six because with all the cheese this makes for a very rich dish.

    Noreen, I have made your ricotta. It's awesome! I made lasagne roll ups. My husband and son loved them! It was amazing to think of the time it took to make that cheese and then, the look on their faces when eating it! So worth the time! Thank you for the inspiration to try new things!     If you have not made Rick's "Irish Spaghetti Sauce" you have to. It is to die for. I have made huge cauldrons of it and canned it. It's a staple in my house. Don't let the "Irish" keep you away from this recipe. It was his Irish mother's recipe. Please, please trust me. It's better than anything in a jar.

    omg the bread n spag bake look awesome, shes in her apron did a lazy man lasagna this kinda reminds me of that but left in layer form, my kids n hubby like it mixed up but i would take it anyway its served thanx noreen

    Noreen, why did you use the parchment? I have never done this before. This looks awesome!

      I don't like the aluminum foil to touch the top of the food. It is much thinner than the foil pan and when the tomato sauce or any acidic food touches it, it can tend to break down and get tiny pin holes in it. When that happens, aluminum can leach into our food. The parchment works as a barrier to prevent this from happening. People will say that aluminum is no problem and that studies have show that it is harmless. I don't believe them because lots of studies have shown that aluminum can build up in our system and can be a major contributor to Alzheimer's and other illness. It is simply my preference.       Noreen's Kitchen Thanks, Noreen. It's true, you learn something new everyday! I got rid of all my aluminum cookware years ago for just that reason, but I never thought about the dangers of aluminum foil touching my food!

    Looks awesome! When reheating the casserole that has been frozen, do you recommend thawing it first or can it go straight to the oven? Thanks for sharing!

      Just put it right in the oven at 400 for about 1 hour, but take off the foil for the last 15 minutes.

      Noreen's Kitchen great thanks! I bought 2 at everythigns dollar today not such a good buy but I was in a hurry and ill re use the pan if I don't damage it to much. I make my own ricotta too! I have a dairy cow so it is a great thing when you have a lot of left over milk! I make manicotti a lot with mine just add spinach and eggs to it and it is sooooo good! OH..also I make my own manicotti shells too! because I have chickens and lots of egg's! thanks for answering me so quickly! Love you videos :)
