  • As promised this is a recipe from "Not Your Mama's Canning Book". Hummus is oh so popular, delicious and nutritious. Wonderful addition to your canning pantry for a quick and easy snack. So excited to give this a try.
    1 1/2 lbs. dried garbanzo beans
    Water
    1 1/2 c. toasted sesame seeds
    18 cloves of garlic
    1 1/2 c. lemon juice
    Makes 6 pints

    Just an FYI: That first water is Aquafabaand has ways it can be used in many recipes including meringue.

      Instant hummus in a jar just came out of the canner...looks and smells amazing! Gonna try to let it set for a week...its gonna be a very long week lol!

    Interesting!!! You are only the 2nd UA-camr whom I've seen canning garbanzo beans for hummus (first was Sutton's Daze channel) and the first to include sesame seeds which I thought were 'no-no' for canning. After searching on the National Center for Home Food Preservation website I question why this seem this seems unsafe to me? I didn't find any references that would either support or discourage using sesame seeds in pressure canning. (It seems safe in pickling recipes which are just water bathed!) And, many so-called Renegade Canners safely pressure can things like cured meats, bacon, butter and even the dreaded (lol) dairy. All of which contain fats that can turn rancid during storage just like seeds. I think I will give it a try based on what I think of as 'due diligence'. This is a thought-provoking recipe and I'm so glad you tried it out and shared it! With proper acidification I don't see why this wouldn't be safe. (Probably why there was so much lemon juice in each jar.) I will do like you and reduce the lemon but also will supplement with citric acid to replace the acidity without harming the flavour. Can't wait for your follow up video! Hopefully I can find time to get a batch canned this week, sounds like a wonderful addition to the pantry shelves and much more cost-effective than paying to freeze Tahini in anticipation of a teensy batch of hummus. Thank you so much!

      Molly Smith I have contacted both the author and my local extension office about the sesame seeds just to be sure. She didn’t make an issue of the amount of lemon juice so I assumed it was for flavor. I also assumed since it was a published recipe there wouldn’t be safety issues. I will note what I find out in my follow up video 😊

    I made this in quarts a couple months ago and just opened the first jar yesterday. It turned out very well. Today I canned 10 quarts of just plain garbanzo beans. Tomorrow I will can black eyed peas. Don't you hate it when you run out of stuff to can. haha

      @@taramay4387 I don't have that book, I just came across the recipe online somehow. The recipe I used called for 1/4 cup but I don't remember if it said for a pint or quart. I used quarts and I did use that much lemon juice in each quart. It didn't have a strong lemon taste at all, to me. My family didn't mention that it did to them either.

    Since you need to blend it to get it smooth, and I don't see the seeds getting completely smooth and if people have issues , then why not just use the Tahini that is used in Hummus instead of seeds?

      Amy Barker canning guidelines state the heat cannot adequately penetrate the jar with puréed foods to be considered safe. The only exception is split pea soup.

    Nothing against this, but I have a great hummus recipe. I was just wondering if I could make it in bulk and just preserve it. It’s garbanzo beans, garlic, lemon, olive oil and tahini (which I make from sesame seeds and olive oil) a little water and some spices so I was wondering if I can can that. How do I can that? Same as this? This kind of defeats the purpose for me bc if I’m getting out the blender I might as well do my recipe. I want to can a completed version.

    Does the reserve liquid thicken after a few weeks? Mine is fairly gelatinous. Jars are sealed and canning practices were followed.

    I’m going to make this recipe as well! Problem is that I have 2 jars of tahini that needs to be used. Does anyone know if I can substitute?

      Wendy C. Before you make this, please watch my follow up video ua-cam.com/video/ewPuJVptj0Q/v-deo.html. If you choose to still can it after watching my follow up video you can still add tahini to make hummus. It will just add to the flavor 😊

    Thank you for this great video & the knowledge that the sesame seeds “could” be unsafe. QUESTION: do you think, in addition to the recipe, adding a roasted red pepper in each jar would make it unsafe in any way?

    I used the whole amount of lemon but not the sesame seeds and the liquid in the jars cooled very thick , kind of like yogurt consistency. Anyone else have that happen? I’m scared to use it and wondering if it would be normal.

      It’s normal. The liquid that solidified is called aquafaba and is used by vegans as an egg substitute for baking etc

    HI. Thank you for the tip on how strong lemon is when canning. I have a question. Since we are pre soaking over night, then pressure canning pints for 75 minutes, do you think boiling the beans on the stove top before canning them, is really necessary? Couldn't I skip this step? Thank you, Lori

      I wouldn’t skip thus step. I would process as the recipe is written.

      When you cook them first they overcook and mash up infinitely better than canned from dry.

    Are you worried that the seeds will create a dense/cold spot in the jar? Are these "approved" recipes? By that, I mean USDA, or National Center for Home Food Preservations, or a Ball book?

    Hi! I'm new to canning but I want to add a canner to my wedding registry :) I want something that lasts a lifetime but also want something approachable and not overwhelming for a beginner. Would you recommend the all american over the presto? Presto seems better for a beginner but wondering if the model you have would be the way to go. Thanks!

      Samantha Meyer congratulations on your wedding, so exciting! I definitely would add the All American hands down. My sweet husband purchased mine for me when I decided I wanted to can (he wanted me to have the best 😉) and I had no problems learning with it. I admit it was intimidating but I just followed the instructions and it was all good. The All American is actually great for a beginner (I had no previous canning experience including water bath) and it will last you a lifetime. You will love it! Mine is the 915 model which I think is the perfect size, it will hold 7 quarts or 9 pints. Best wishes 💕Carol
