You know. Looking back on my first couple of years on pastry, running the majority of the section on my own. Sorting out afternoon teas, weddings, al a carte and parties of all kind. Seeing a large team like this, I hope when they’re short staffed, the staff appreciate the times when they’ve got a full team. I know I certainly do.
