TY for sharing! One pizza tip is to cook the crust with the sauce for a short time first. Put some olive oil on the outside crust, then place the mozzarella on it and it's done when the cheese is melted.
Hi there. I know you have mentioned why you use the tray but by using that you are significantly changing how a pizza cooks. It needs the extreme conductive heat (400°C) from the firebrick floor tiles to rapidly cook the base and move up into the passata and topping layers, the pizza in cooked via both intense radiant heat from the walls and roof and the conductive heat from the floor. The aluminium tray will effectively prevent half of the cooking process this which will totally alter the feel, taste, appearance etc of the pizza. Cheers
