    BETH'S TARTE AU SOLEIL RECIPE (2 WAYS)
    Serves 6-8

    TARTE SOLEIL AU PESTO
    INGREDIENTS:
    2 sheets puff pastry, cut into large 10" (25 cm) circles
    3 tbsp (45ml) store-bought pesto
    1 egg, beaten
    sesame seeds if desired
    METHOD:
    Preheat oven to 400F (200C)
    Roll out pastry and plate down and cut out a circle. Transfer circle to a rimless baking sheet lined with parchment paper.
    Place pesto in the middle of the circle and spread over the pastry leaving a 1 inch (2.5 cm) border, all the way around pastry circle.
    Place 2nd circle on top.
    Place small juice glass in the center of the circle to create an indentation. Remove glass.
    Cut pastry into four quarters, keep the center intact as a circle.
    Then go into each quadrant and cut then in half then quarters this will create 4 slices per quadrant and create even "rays" around your tart. Place the tray in the freezer for 5 mins just to firm up a bit to make it easier to twist the rays.
    Then twist each ray with a 2-turn twist, allowing the tail to lay flat. Once all the twists are made pop the tray back in the freezer for 5 mins, this will make it easier to brush the egg wash on.
    Brush beaten egg on the tart. Sprinkle center of the tart with sesame seeds. Place in the freezer for 5 mins to firm up. This will help the sun keep its shape as it hits the hot oven.
    NOTE: This whole thing can be done the day before, cover lightly with parchment paper and leave in freezer or fridge and when it comes time to serve, bake immediately no need to thaw first.
    Bake tart for 20-25 mins until golden brown and puffed up. Serve on cutting board and invite guests to twist off the rays!
    TARTE SOLEIL AU NUTELLA
    Same recipe and technique as above but add 3 tbsp (45 ml) Nutella instead of the pesto!

      Is there any way for use another shipping carrier besides DHL? I'm still awaiting the October box due to their inconsistency in leaving notices for missed deliveries. UPS or FEDEX would be so much better.

    I made this Tarte Au Soleil this morning using my own pesto sauce. It turned out FABULOUS! My husband and I ate the whole thing w/a couple glasses of wine...of boy, was that good! He was so funny when he said to me 'Don't share this recipe w/anyone!' and he meant it!!! Thx Beth

    A tip: if you don't have a cookie sheet without sides, just flip over your regular cookie sheet and put the parchment on the back and cook it that way. Temp and time are the same.

    in France it called Mediterranean Soleil tart. It comes along with other ingredients on the top of your homemade pesto such caramelized onions, olive tapenade or sliced black olives, sliced artichoke and of course served with a glass of full bodied chateau Margaux ... soooo good

    The napkins look very pretty, we used to do these in our home economics class in 5th or 6th grade or have our grandmas teach us. I still have some to this day:)!

      Down here in Boston with my daughter and grandchildren I browse through YT for puff pastry recipes for the young ones and hurray what do I find! Beth’s entertaining dishes so tempting and mind blowing for a person from India !

    I followed all your steps and made some little triangular pieces with the offcuts and the pesto to taste and save the tarte. I used the two long offcut strips to make a cheese and tomato pie. The dogs ate the leftover egg wash. As you see, I can't waste anything! The tarte, well, the tarte looked gorgeous, very impressive! I took a photo on my mobile and showed it to the young woman that served me with the pesto as she wanted to know what I was using it for. She said "WOW!" but honestly, it really did look great! Thank you Both and all your devotees. XXX

    I loved this you can make anyway by adding just about any flavor I have tried it with lemon pudding and Brie. Chocolate with crumbled nuts. Caramel and vanilla pudding and the list goes on and on I love this recipe.Thank you so much for this video Lori B

    We made these for a dinner party recently. Both the Nutella and the pesto ones. Apparently Trader Joe's pastry sheets are a seasonal item, so they only have em during Christmas. However, I found that using the Pepperidge Farm from Target works just as well. The only thing is, you have to set it on the countertop to thaw and soften, so that you can unroll it into one giant sheet. If you do it when it's cold and frozen, you'll just get three thin sheets. :)
    Oh, not to mention, they were a hit.

    Oh wow! What a show stopper. And it seems the possibilities with the filling could be endless. Maybe raspberry jam and cream cheese? Anyway, I’m definitely going to give this a go!

    I made this for a Winter Solstice party and my friends LOVED it, thanks, Beth! The only problem was that they all wanted the recipe and found out how easy it was, so I could no longer impress them with my amazing skill!

    Thank you so much for this recipe. I was looking for an appetizer to take to a dinner party this week and an appetizer for my Christmas open house. Not only will these variations work for both but now I can use the puff pastry in my freezer.
