    Olá, John! Tudo bem?

      Pigskin Barbeque sauce was fantastic mate! I did some beef ribs and pork ribs too. Pork options are very average once you get out of major cities down here- small racks and almost always have no meat on top of the bones. That meat usually gets trimmed for bacon so our pork ribs aren't really worth smoking. One thing I did was halve the chili powder just to be safe (can't take it back out later!) and that amount of heat was fine for me. The sauce reminded me a lot of a Lillies Q sauce I bought years ago. I say this as a compliment because it was probably the only store bought sauce I've enjoyed.

    I just made this again, and I realized something. It actually taste just like my second favorite BBQ spot I go to at home in Memphis. The only difference is I usually get the hot version where it seems like they add more black pepper to it. There are a few places here that have a very similar sauce. I could just look at the ingredient list and tell it was probably mostly right. Just the look and taste of the sauce from most places, you know they have ketchup, mustard, and vinegar in them.
    Now I'm working on tweaking this recipe one ingredient at a time to make it more like my favorite place in Memphis for pulled pork sandwiches. I'll start off with maybe a little less ketchup. Then maybe reducing the brown sugar and/or the molasses. There are some places in Memphis I like that have a sauce somewhat similar to a western NC sauce, but not as tangy. I might also experiment with making it a couple days ahead of when I want to use it.

    This is a damn fine sauce. I throw in a little paprika, just a little. I’d say using good spices is important too. Don’t get Chinese onion powder from Dollar General. I know an old guy that cooks down sweet onions and purées them. Just get good ingredients.

    • @PigskinBarbequePSB
      @PigskinBarbequePSB  7 років тому +1

      +C M thanks for stopping by and checking out the video.
      Depending on which cut of ribs you're doing it will vary. We usually use 1.5 Tbsp of rub on each side of the ribs, full spare ribs we use 2 to 2.5 Tbsp of rub.
      So, there should be enough rub to do 3 full spare ribs, 6 St. Louis style ribs and about 8 to 10 baby back ribs.
      The recipe provides enough sauce to do 4 spare ribs, about 6 to 8 St. Louis and baby back ribs.
      We usually put the rub on each side of the ribs and wait until it starts to look wet before doing the other side. Then place on grill to cook, placing a coating of sauce on them the last 30 minutes of cooking so the sauce cooks in.
      Below I'll provide you with some links to our step by step cooking process for ribs.

      Hey brother I know the exact sauce you looking for. The thin sauce that go on pulled pork sandwiches like the old pit bbq joints use to sell. We grew up with it in West, TN. After many years I discovered something close. Look up Lexington style bbq sauce. There are several but I use the one from Luvvy Bbq. It taste just like that tangy sauce some of them brothers in Memphis using.

    • @SonicBoomC98
      @SonicBoomC98 2 роки тому

      @@etgrider77 Yeah that's what I'm using now. I saw a video from a guy who did a western Carolina-style sauce. I think it's Luvy's Fat or something. There is another called Free to Cook that has a good sauce. Some places in Memphis do have a thick sauce like this one, but I'm going to cut back on the ketchup to make it more similar to Lexington style

    • @etgrider77

      Maybe if you cook it down well enough. I made a similar recipe with tomato sauce instead of ketchup and the tomato taste was just overpowering. I guess I could try it with pureed tomato instead, but I wonder if I would have the same issue

      cayenne flakes or a few flakes of any pepper not to much, i added a few ghost pepper flakes to make it super spicy the way i like it but with others it shouldnt be bad at all

      There is a place in Memphis that makes a similar sauce. At one location they use cayenne to make is Spicer. I think at all the others they put something spicy in when making the sauce. Tabasco maybe?

    Thanks for sharing Bro! I don't use chilli for that recipe. I use real garlic and real onions and tomato puree. Another key ingredient missing here is oregano. Still your BBQ sauce looks great!

      No oregano at all in this sauce, but the good thing is you can adjust it however you like to suit your taste.

    I used to run a Memphis BBQ restaurant (previously was the KM and pitmaster). Memphis BBQ sauce is NOT made with ketchup (never has been). It's usually made with tomato sauce these days (with a little tomato paste added), however I've seen variations with crushed tomatoes and originally it was made with cooked, blended whole tomatoes (that's the style Henry Perry took up to Kansas from Memphis when he introduced BBQ up there). If you use ketchup, then you've made something closer to a Texas-style sauce, which is perfectly fine if that's what you like, but you can't call it Memphis-style because it's not.

      It's Memphis style, it's not Memphis BBQ Sauce

      @PigskinBarbequePSB That makes no sense. What do you think makes Memphis BBQ sauce "Memphis style" if not its ingredients? Memphis BBQ sauce, "Memphis style," whatever you want to call it doesn't use ketchup. Just like the word "barbecue" isn't spelled with a "q" (you didn't even get that right either). Just accept that you don't know WTF you're talking about.
