    Just a heads up for anyone who makes this, the mustard part has to be a lot less, I just did an attempt at this and I got a yellowish bbq sauce🤣. What worked for me was 2 parts ketchup, 1/4 part mustard, 1 part vinegar, 1/2 - 3/4 part worcester

      you are correct. i have since changed my ratios. sorry you had to make the first batch. haha.

    Thanks Joe! Hadn’t thought about the cinnamon/ginger before, but that’s a great idea especially with that orange. Definitely gonna try a version of this on some Pork belly. Bless🤙

    Hey Joe, great video and great advice. I watched to many videos online, showing that everything had to be precise. I then had Max from Texicana BBQ come consult and learn its certainly not all precise. I have played around with BBQ sauces as you have mentioned and come up with some great sauces. Appreciate your honesty!

      Max! That’s my guy. Yup, definitely. I only becomes precise once you get it exactly the way you like it and you need to make batches quickly, but I get too bored of the same stuff that I’m never exact with sauces. Haha

    Great video as always. I tend to use powdered mustard instead of the stuff from a bottle because it gives you a little more control over how much vinegar you're adding but to each their own. Should we interpret "I'm going to be getting a little busier in the next few months here" to mean we might finally get some Knox Ave. pop-ups?

    Im not ready to make a sauce yet but i wanna use something like sweet baby rays as a base and tweak flavor profiles from there. I use a green habanero hot sauce in the sweet baby rays for a spicy bbq

So looking into pop ups and catering. I have a pit boss 1150 pellet smoker. I got a lot of great reactions to my pulled pork, ribs, chicken and briskets. I wanna get out of truck driving so doing the research to get off on the right foot.

    Hey Joe if you would like to change it up a bit with the sweet component you might want to try Steens pure cane syrup along with your molasses.

    From my experience with the chicago sauce especially, uncle johns, lems, leons, and barbara anns, they are sweet, but vinegary. Its a delta style bbq sauce similar to a central Va sauce.
    Nevertheless great vid!!

      For sure. There’s definitely a difference of south side and north side, which is more on the Kansas City style sauces. Thanks.

      Look for white bbq sauce or mustard based sauce. For red sauce, replace the sugar stevia or some other sugar substitute. I had to get creative when my diabetic mother got kidney disease.

    There is no such BBQ sauce known to man, or angel, on Earth, or in Heaven called, "Chicago BBQ".

    • @Myrcella_Rykker
      @Myrcella_Rykker Рік тому

      It's called Carlson Ribs BBQ sauce. It's a Chicago thing and joint. If you grew up eating it and move away, you crave it. So if it's not Chicago bbq sauce, pray tell what is this sauces name and origin. I'm not mocking you, I clearly want to know because I have been for two years off and on been looking for a copycat recipe for Carlson Ribs boneless pork chops. FYI it's not on the menu anymore. The closes answer I've gotten is Chicago bbq sauce. Which I've made several batches of and is close

    • @metallica1fan1
      @metallica1fan1 Рік тому

      @@Myrcella_Rykker, you are probably used to what's called Kansas City style. It's from Missouri and is heavily molasses based bbq sauce.

      @@Myrcella_Rykker, now if you want to experiment with the different types of BBQ, there is...
      1.) Tennessee, which is dry rub BBQ.
      2.) North Carolina, which is a vinegar based sauce.
      3.) South Carolina, which is a mustard based sauce.
      4.) Alabama, which is a white sauce.
      5.) Mississippi, which has what's called, "Comeback Sauce".
      6.) "Kansas City" style (as mentioned previously)
      7.) Texas, which has no sauce.
      8.) Florida, which is MOJO pork (for it's Spanish/Cuban influence and history) and a Datil Pepper BBQ sauce (for it's Minorcan influence).
      9.) Georgia, which has a Peach based BBQ sauce.
