    I made this the other day, and it was an easy and actually fun process filling the tomatoes and poblano peppers with this Greek style filling. The house smelled so good as the dish was baking, and the flavor of the filling was really delicious. I used fresh mint instead of dry, but otherwise followed the recipe. The tomatoes gave the dish a little bit of tang, and the next day, this tasted even better! I will definitely be making this again. Thank you sharing an easy, yet delicious, recipe.

    Yummm!! Looks nice! My mom always had eggplants stuffed along with tomatoes and peppers. And she didn't bake them, she cooked them on the stove in a low heat and without adding rice. Have you ever tried stuffing without rice?
    In Azerbaycan we usually make it without rice, we use rice only for stuffed grape leaves and cabbage. It tastes much better without rice - Actually it's completely different taste.
    In Egypt they add a parsley. I hated the taste.

    You're welcome. All spice is brown in color and resembles large brown peppercorns. The whole corns have a longer shelf life than the powdered product and produce a more aromatic product when freshly ground before use. I always grind the allspice just before using it and if there is any left over I store it in a container with tight lid in my pantry for later use. You can find all spice in almost all ethnic grocery stores.

    @ccm800 Hi, you can omit the mint if you like. As I suggested before you can use dried dill instead. The taste of course will be different, but still very delicious. Give it a try and let me know about the result. I will be glad to hear from you. Enjoy!

    I'm Greek. We regularly cook gemista. The rice does not have to be cooked. It is optional. You can also use a variety of rice not necessarily white. Quinoa is an awesome addition too.

    @redbunny4u You can omit mint if you like. specially if you are allergic to it. Do you like dill? If you do you can add a half teaspoon dried dill instead of mint. Of course dill is not a substitute to mint, but it adds a nice flavor. I hope I helped. Enjoy!

    Thank you. Glad you like the recipe. It's possible and it's done all the time. But the reason I didn't cook the rice completely with tomato sauce before stuffing is so that the stuffing doesn't turn mushy while being cooked again in the tomato shell. Thanks for your input.     You're welcome. The stuffed tomatoes is baked at 400 F. 1 h and 20 minutes is suggested cooking time. You should always check to make sure it's not overcooked or burned, because the cooking time changes with different oven. Give it a try and if you have any other question I will be glad to help.     It is yummy and easy to prepare. you can cook the Greek stuffed tomatoes on the stove if you like but you have to add a little more liquid to it. We always include rice or in some cases bulgur in our stuffed vegetables. We don't add rice only when we stuff baby zucchini. I'll upload the video when I find baby zucchini on the market. Many don't like parsley or mint. You just exclude what you don't fancy from the recipe to adjust it to your taste. We do it all the time. Enjoy!

    @GrayWulf316 I have another recipe in which the meat and the rice are not cooked prior to the stuffing. preparing the way demonstrated in the Greek stuffed tomatoes video, results totally different taste. Both recipes are great, only different.

    I am glad you loved the Greek stuffed tomatoes. the rice is just cooked few minutes prior to the stuffing. The meat in this recipe needs to be cooked perfectly well but not the rice. Give it a try and share your experience with us. it will be appreciated. Enjoy! :)

    Thank you so much for sharing your recipes! I'm curious, when this is fully baked, do you toss out the tops of the tomatoes and peppers wher the stem was, or are they edible? I'm growing lots of vegetables this year, I am going to try this for sure!

    You can toss it away if you like but the tops are edible just discard the stem part.

    Nice, but I prefer to fry everything together before filling my tomatoes, peppers and eggplants. I love my gemista, but my late mother in law used to prepare the best I have ever tasted. I miss her so much.

      +Charles Kerry usually you do cover it for the 1st hour,after you uncover it and leave it cook like that for the rest of the time

    the seeds are not good fro your stomach and intestines. so, wht I would do is, cut the tops of and sqeeze the tomatoes upside down first, strain the juice to separate the liquid from the seeds, and then scoop out remaining insides and chop them and mix with liquid

    Mine is way better. Try veal much nicer then ground beef, don't confuse with too much spice all you need is salt pepper garlic onion and parsley. Add the tomatoe try some crushed as you are still cooking the rice and meat. And simmer till all the flavors mesh together. Add the rest of the tomatoe and some olive oil when you put it in the baking dish. I also add some bread crumb on top of all the veggies. This helps them to NOT burn and adds a nice taste and texture.
