When you salt the meat, you are brining it. Either leave it for a minimum 1 hour before cooking, or season immediately before grilling. Anything in-between results in a dryer steak as the salt will pull the moisture out and not leave enough time for the steak to reabsorb.
Thanks for posting. If you want to get a really, really good sear - I'd suggest buying a vortex for your Weber. It will give you incredibly high temps for a good, quick sear. Finish it on the cool side to your desired temp. You can also pan sear with cast iron over that fire too. Love that t-bone.
I never ever cook anything on a charcoal grill by a SET time if you do you will just ruin good meat. Peeking at your steaks is better than burning them.
Those are bone in ny strips. There’s barely a Smidge of filet mignon on the other side of the my strip side of the bone…. Buy your meat properly. Half n half. Makes a true T BONE. Half NY strip half filet mignon. That’s a true t-bone! You have a bunch of bone in NY strips….grill/cook them properly. RARE

Yeah I’ve been eyeing that vortex for a while. I’ve been trying to perfect my seat using just coals in a mound, but too inconsistent.

Nott a mis steak. Just pan fry butter rinse it with garlic for 5 minutes and u git a juicier steak than the grilled 1s but gold flavor

Fair points, but what I believe you’re describing is a porterhouse, which does have the proportions of the NY strip and Filet mignon.
These are t- bones, the strip and portion of the filet. Porterhouse steaks have a bigger portion of the filet on them
