I used the oven at 325 to 110, removed, cooled while preparing other things then seared on the Ninja woodfire grill. The tenderloin was tender and the sirloin was a little tougher but I actually got to finish it tonight. Had one the other night that was done in the sous vide and then seared and it was like shoe leather. Over cooked. Thank you for sharing. There is hope for me yet LOL

I watched this after I ruined a beautiful porterhouse. The filet side was medium and the strip side was tough and chewy. Man! I should've watched your video first!!

Yeah it’s more of a practicality piece so that you don’t have to touch cameras with dirty hands or wash them every time a setting needs to be changed. Just to the gloves off and boom. Clean.
Looks good but overkill. Many people dry off the steak / protein prior to the sear . However, they defeat the purpose of removing moisture by adding oil. Not necessary to prepare a second round of coals for a steak to sear. KISS !!
