    I used the oven at 325 to 110, removed, cooled while preparing other things then seared on the Ninja woodfire grill. The tenderloin was tender and the sirloin was a little tougher but I actually got to finish it tonight. Had one the other night that was done in the sous vide and then seared and it was like shoe leather. Over cooked. Thank you for sharing. There is hope for me yet LOL

      Heck ya Troy!!! I learned this the hard way a few times and after I decided that the tenderloin will still be good a little overcooked but the NY Strip overcooked is like taking a bite out of your sneakers! hahaha Thanks for watching brother!

    Woohoo! Dang brother, you crushed this cook! Cooking T bones and Porterhouses correctly is not as easy as some people may think.     I thought a T-Bone that size was a Porterhouse anyway? 😅
    Looks damn good though. I'm not a fan of blue cheese, but otherwise that method does turn out an amazing steak.

    Aww-man ...we loved every bite... But the cheese..
    It really only depends on you but the blue cheese ..ooft.. did not do it for me, instead of using blue cheese try the sweeter white fresco worked for us we loved it very much.😃 Still great job big guy hey we love your BBQ recipes still awesome..
    oops however ....😅😅 Yeah okay my mother and my loving my loving wife 🙄 preferred it a little Southern TEXAS spicy just a little bit...

    Why do you wear latex gloves? Seems unnecessary. Oh hang on…..I get it now. It’s to take the grid out of a hot Weber. 👍 Looks like a great peace of steak though. That I’ll give you.

      Yeah it’s more of a practicality piece so that you don’t have to touch cameras with dirty hands or wash them every time a setting needs to be changed. Just to the gloves off and boom. Clean.

    Looks good but overkill. Many people dry off the steak / protein prior to the sear . However, they defeat the purpose of removing moisture by adding oil. Not necessary to prepare a second round of coals for a steak to sear. KISS !!
