- LIVING WITH DEMENTIA EP. 20 | COOKING WITH DEMENTIA. Today Jason is in the kitchen cooking one of his favorites for you! Stay tuned at the end for a blooper reel!
RECIPE:
Bulgogi
Ingredients:
1 pound of beef tenderloin, cut into thin slices . inch x 2 inches and .inch thick
Marinade (for 1 pound of beef):
½ cup of crushed Korean
1 pear (aka “Asian pear”)
¼ cup onion purée
4 cloves of minced garlic
1 teaspoon minced ginger
1 chopped green onion
2 tbs soy sauce
2 tbs brown sugar (or 1 tbs of brown sugar and 1½ tbs rice syrup)
a pinch of ground black pepper
1 tbs toasted sesame oil
several thin slices of carrot
Directions
Marinate the beef
1.Mix all the marinade ingredients in a bowl.
2.Add the sliced beef and mix well.
Vegetarian option:
Use the same marinade above and replace beef with mushrooms. You’ll need 10-12 large dried shiitake mushrooms. Add a few white mushrooms if you like them.
Soak the dried shiitake mushrooms in warm water for several hours until they’re soft.
Squeeze out any excess water and slice each mushroom thinly.
Slice some white mushrooms, carrot, and onion.
Mix all of it together in the marinade.
Grill and serve
You can grill, pan-fry, or BBQ right after marinating, but it’s best to keep it in the fridge and let it marinate for at least 30 minutes, or overnight for a tougher cut of beef.
Grill over medium-high heat. Best is over an open flame on a grill or cast iron grill pan or skillet, but stir-frying will also work, if that’s all you have.
Serve with Korean side dishes (banchan) like kimchi as well as lettuce, ssamjang, and garlic cloves to make lettuce wraps, like I do in the video. Just put some meat on a lettuce leaf with some ssamjang and a clove of garlic, wrap it up and eat it in one bite! Everyone makes their own wrap, one by one, until they are finished.
Kimchi
Ingredients
• 1 head baechu (napa cabbage)
4 lbs of cucumbers (I like using pickling cucumbers)
• 1 cup kosher salt
• ½ cup sweet rice flour
• ¼ cup sugar
• water
• 1 cup of crushed garlic
• 1 to 2 tbs ginger, minced
• 1 cup onion, minced
• 1 cup fish sauce
• 2½ cups Korean hot pepper flakes (gochugaru) (to taste)
• 2 cups leek, chopped
• 10 green onions (diagonally sliced)
• ¼ cup of carrot, julienned
• 2 cups Korean radish, julienned
Directions
Prepare the cabbage
1. Trim the discolored outer leaves of the napa cabbage.
2. Cut the cabbage lengthwise into quarters and remove the cores. Chop it up into bite size pieces.
3. Soak the pieces of cabbage in cold water and put the soaked cabbage into a large basin. Sprinkle salt.
4. Every 30 minutes, turn the cabbage over to salt evenly (total salting time will be 1½ hours).
5. 1½ hours later, rinse the cabbage in cold water 3 times to clean it thoroughly.
6. Drain the cabbage and set aside.
Prepare the cucumbers
Slice cucumbers into equal size slices. (I use a mandolin and shoot for ¼ inch)
Add slices to colander and sprinkle with kosher salt
Let drain for 30 min
Make porridge
1. Put 3 cups of water and sweet rice flour in a pot and mix it well and bring to a boil. Keep stirring until the porridge makes bubbles (about 5 minutes).
2. Add ¼ cup sugar. Stir and cook for a few more minutes until it’s translucent.
3. Cool it down.
Make kimchi paste
1. Place the cold porridge into a large bowl. Now you will add all your ingredients one by one.
2. Add fish sauce, hot pepper flakes, crushed garlic, minced ginger, and minced onion.
*tip: it’s much easier to use a food processor!
3. Add green onions, chopped leek, Korean radish, and carrot.
4. Mix all ingredients well and your kimchi paste is done.
Action! Mix the cabbage/cucumbers with the kimchi paste!
1. Put the kimchi paste in a large basin and add all the cabbage. Mix it by hand.
*tip: If your basin is not large enough to mix all the ingredients at once, do it bit by bit.
2. Put the kimchi into an air-tight sealed plastic container or glass jar.
You can eat it fresh right after making or wait until it’s fermented. I usually put all my kimchi in the fridge except for a little bit in a small container. I like fresh kimchi, so this way the kimchi in the fridge ferments slowly and stays fresh, while the smaller container ferments faster and gets
sour. I use this sour kimchi for making things like kimchi jjigae where sour kimchi is better. Then, when the small container is empty, I fill it up again with kimchi from the big container. It takes a little management, but experiment and you’ll get the hang of it!
How do you know it’s fermented or not?
One or 2 days after, open the lid of the Kimchi container. You may see some bubbles with lots of liquids, or maybe sour smells. That means it’s already being fermented.

Jason, you did a great job guy. As a fellow dementia man myself, doing everything we can to try and “slow the fading away” is all good. I too have this year transitioned to have “fun in everything” as much as possible. I loved your Korean dish….it looks so yummy. You encouraged me Jason, after watching you, I face a very overwhelming/overstim afternoon. But looking back to my iPad, I remembered what I watched you do…and then this evening, after “I healed up with a time of “gentle””, I became busy checking off some boxes on our Reminders Lists. Karyn and I found out that we can share the iPhone Reminder List, and it is becoming very handy and extending “Grandpa’s Memory Board”, on the fridge (a whiteboard). I am having a real challenge, like you Jason, with forgetting what I am thinking before I can get to a piece of paper and write it down. With the Reminder List, I can just grab my iPhone and speak a thought into it - a thought on anything. I love your comment about “38 seconds”….that all I can remember from that. Anyways my dear friend, from one Fader to another Fader….keep on trying. Oh, I found a 8”x11” little bright red awareness poster from my last job in 2014. It has a great saying on it….and I posted in the hallway on the way to the back door, where we all stand and talk before leaving, “PEOPLE WHO SAY IT CANNOT BE DONE, SHOULD NOT INTERRUPT THOSE WHO ARE DOING IT”. My 87 year old dad has just been diagnosed with dementia, although we thought that he had memory loss, it has been very confronting; my dad is devastated. The really lovely thing about my dad is that his wicked sense of humour is still there.

Dear Leslie-I want to thank you and Jason for episode 19 on Loneliness. That was a beautiful chapter in this journey. Totally real, emotionally powerful, and an authentic window into what dementia looks, sounds and feels like. Thank you very, very much. I am one of those you acknowledged on the other end of the spectrum-but with the same results. My husband follows me all of our waking hours. He talks to me nonstop and issues questions upon questions interspersed with demands. If I give a response that he doesn’t like, he berates me with verbal abuse, false accusations and degrading insults. He swears at me mercilessly. And all hell breaks loose if anyone phones me. My husband paces around me calling me names, shouting at me to get off the phone or things “will get physical.” He calls names about the callers in the background, upsetting me and them. Even our doctor’s office knows to text me and ask if it safe to call. And when I leave the room or go into my bedroom to get a few moments’ respite-my husband bursts into tears and sobs. So I come back out into the living room ot kitchen etc. to be sure he is OK and he cries out, “Oh there you are!! I thought you were lost! Please don’t leave me.” I have not seen any of my friends in nearly 4 years. I only see a few family members or my own daughter (only child) a few rare times a year because this is her stepdad and he scares her. I have changed my whole life to give my husband a better quality of life by keeping him at home, out of memory care. He gave me many happy times and adventures. But I keep rescheduling my own medical appointments because I have no one to stay with my spouse. I know this is not sustainable. Your videos are a lifeline because unless someone is living this-they have no idea in this world what this journey is like. Thank you and bless you and your family. We love you. ❤❤❤

Great video, saw ep. 19 comments were turned off, i can understand, however wanted to say my daughter in law now deceased had times when we were checking on her that she got upset. Her breast cancer had spread to her brain. And we slowly watched her become someone else. My son died from cancer 11/1/22 and his 21 year partner whom I refer to as daughter in law died 8/31/23. So now coping with helping my grandson who is just 20 yrs. old cope with it all. I fully as a nurse, mom, motherinlaw and grandmother understand a great deal of what you are dealing with. Prayers to you and Jason and your entire family. Sending hugs!
I also lived in S Korea in 78-79 as a civilian wife of a soldier stationed near the DMZ. Korean food is amazing. Thanks for doing this video. It was very enlightening!

My son is a headmaster in Korea and has been living there for 8 years. I have not seen him for 5 years. So next year my husband and I will be visiting Korea for the first time and are very excited. Ethan loves Korea, especially the food and the people and the culture.

I’m thankful to have never had to take a tour to Korea (I spent 25+ years in Air Force). My short tour was in Turkey which was pretty lovely. I do love me some bulgogi though so I am definitely adding this to our dinner rotation. It looks delicious!!

Our son loves anything Korean. We love bulgogi and have tried making it ourselves. Him and my husband love kimchi. Some 3+ years ago our son starting teaching himself Korean. He's gotten good at it, but wants to speak it fluently, so he keeps working on it. I watched some kpop drama with him and he has taught me the alphabet. We are very proud of him. He wants to move to S. Korea some day. Glad Jason was able to show some cooking and his bulgogi looked so yummy.
