  • This Amish Canning series is the result of an interview that I had with an Amish woman and her family. Please know that all of these Amish recipes and techniques (concerning canning things that would normally be pressure canned) are considered REBEL canning recipes and are NOT USDA approved!! And you would be using the recipe at your own risk. Please do your own research and decide what is safe for you.

    My grandmother water bathed everything. Her husband and son would set up a fire pit outside and that's where she canned every year until they moved out of their log cabin. She would can 400 to 600 quarts every year of meat, vegetables, jams, jellies, pickles, fruit, and kraut.

    Your video about the interview with the Amish lady is getting so much flack from the "always trust the government" people and I am just appalled that all those people are so quick to dismiss methods that kept the human race alive for hundreds and hundreds of years. I'm stoked to try this when my potatoes are ready. Pressure canning just doesn't work for me at my elevation because I can't find a proper weight for my canner (it's the brand I have, and I don't want to give it back because it was a bday gift from my favorite aunt). I'd rather just use it for the methods that not only worked for so long and didn't kill anyone and that aren't killing the Amish today. That old saying "If it's not broken, don't fix it" absolutely applies to this. The USDA and FDA would rather have us buy and buy and buy new things than keep doing and reusing, because reusing items and methods do not make the government any money.

      Spot on. I started following Make it Make at the same time I started following someone else. I have since Unsubscribed from the other lady. Don't need big money to keep me and my family safe. If it is good enough for the Amish it is good enough for my family!

      A few years back when I finally had some time to start canning a few things, I joined some Facebook canning groups. I was eager to connect with others who were preserving their harvests. I was bashed when I said “I don’t pressure can”. I explained that I learned to can from my mother and she from her mother and neither ever owned a pressure canner nor killed anyone with bad food. It didn’t go over well and I quickly left the groups. I knew they didn’t know what they were talking about so it didn’t effect me other than make me sad that they shut down people offering other ways of doing things. One theme I found was this. People are looking for “foolproof” ways of doing things. They don’t want to “learn” how to do things that can have negative consequences if done wrong. I feel this is not a positive step for society. When you dumb down things in the name of “safety” by making things to uniform you cut the art of skill. It’s that “art of skill” that has brought humanity to this point! Now we’re all to happy to flush those skills for easy ways. For charts and tables, algorithms and mathematical computations. You can know all the technical aspects but lack the actual skill to put those aspects into action because skill is not only learned, it relies heavily on intuition as well. Which the “strict USDA” crowd lacks!

      @@Junkinsally I'm so sorry that happened to you! I've experienced similar reactions, it really is sad. I believe the only "foolproof" way of doing anything, especially canning (totally applies to anything you consider a craft or hobby!) is to just keep trying and trying and trying. I learned early on that baking from recipes hardly ever works for me so I began creating my own recipes or just winging it from scratch each time. Hobby things are going to, no matter what it is, have that Babe Ruth effect - more strike out than home runs. But the home runs are going to be AMAZING and incomparable. With canning, I have a feeling people are only looking at the hard fails - like that story of an elderly church lady who accidentally poisoned her entire church from a bad batch of canned potatoes. It reminds me of Thomas Edison trying to deter people away from Nikola Tesla's energy ideas by claiming Tesla's energy currents kill elephants then proceeding to electrocute elephants in the street "as proof". Clearly the Amish haven't died out from botulism, nor any other country to cans (most countries in Europe and Asia still do - and waterbathing at that!). Part of surviving something like botulism is our immune systems, too - no one gets out and gets dirty anymore, no one exposes their bodies to the wild variants that are all around us at any given moment because "ew dirty germs bad". There is so much to learn from researching how our ancestors survived without electricity and pressure canning and anti-bacterial wipes. Clearly those methods have worked because the human race flourished with their methods.

    Love your Amish canning videos! I grew up ..well let's just say a long time ago..lol. My mother and her mother water bathed EVERYTHING.. happy to report all of moms 11 siblings survived and mom managed to keep us 7 alive as well. 👍

    1:07 So that you can see that you washed the potatoes well, it is better to transfer them to another bowl with your hands. Then you will see pure water or water with visible dust left. Instead of draining the water, you will not see if there is dust under the potatoes. And if the bowls are white, then this is very good. It is easier to see pollution on white.

    Really great canner. Love your channel and how freeing it is to watch someone who is not fearful of not following agency recommendations to the tee! Canning has been going on successfully since long before there was an FDA or pressure canners and it's nice to listen to someone who recognizes that. Best of luck with your channel.

We have become a very fearful society - and fear is one of the most powerful weapons, especially when dealing with large societies ..it is cheap and very effective and can be cloaked as "for your own good". The last few years are a great example!

    I only waterbath canned for years because I had really old Ball and Kerr books that said how. Now I have a pressure cooker and I am afraid to use it. Watching you has me very happy to waterbath stuff and be scared. We harvested our potatoes and we are canning them this week. I had done it before and forgot. I am so glad I found your channel and subscribed so I can look at all your videos. You are awesome and your knowledge is amazing. We live in Amish country in northern Indiana and I have several of their cookbooks. One year I canned apple cider. It was delicious. Years ago I canned bread in a jar in the oven and lost the recipe. Now they say that's not safe. Grrrrr the government has their noses in to much stuff.

    you are an inspiration- I am 76 and basically canning is limited due to my health,,,,I grow elderberries and make elderberry syrup…. I am a believer as well….I see the need to have a pantry such as yours but that season for me is over…..” contentment with godliness is great gain” ….my reach for now…blessings on and to you !

    Thank you for your great videos. I have not started my canning journey yet but I am excited about it. I did do a test jar of potatoes last night and it turned out fantastic. I haven't opened it yet to try them. I wish I could attach a photo of it because it is beautiful. Also it was a good used lid.

    I learned to water bath when my boys were little, so now that I am starting over, I really love this method. BTW, my boys are much older now, it's been minimum of 35 years since I canned.

    Hey! Just watched this. I'll be doing it tomorrow. How simple!!! Also, thanks for recommending the lids. I grew up with a mother who canned all the time but I've never done it until now. So I canned my very first few quarts of pickles today from the cucumbers and Dill in my garden. The lids sealed so quickly with their little pop sound I was really surprised. All of them sealed within the first 30 minutes! 2 of them in the first ten! Great product.

    Thank you so much for this video and others, subscribed cause it has a great value. You explain everything very good. I am from Europe (Belgium) and like the Amish we NEVER use a pressure canner, everything is canned with the water bath here even meat, poultry ... you name it. We've learned this from parents, grandparents, and even big parents. Please don't listen to those who say it's unsafe because people have been canning the water bath for decades. Such rules are made by people who have never entered the kitchen... For potatoes in Europe we have the crumbly (used to make mash) and the solid (for baking), the crumbly I dry into powder and the solids go into the water bath.

    So I tried canning potatoes using this method last night. We opened a can this evening for mashed potatoes to see if we liked how they turned out before doing more. The vinegar taste definitely came through. It was like a tangy after taste. This would probably be good for potato salad but not the best taste for other dishes. I will either cut it back or cut it out completely and process longer if I do more. The texture was very good. They were firm even after the two hours of processing.

      I did it! It ended up being way later than I had expected when I finally got around to getting them prepped and into jars. I water bathed on my rocket stove out back beside my bonfire until about 12:30am. 7 quarts all sealed 💜 and it was a beautiful night for stargazing

    These are great canners for those who put a lot of food by. Mine doesn't have the spout but I just use a gallon plastic pitcher to empty it after it cools.

      mine has a lip but way to heavy for me to hump over to the sink so I use an empty saucepan too. I try also to use that hot water for something and if not leave to cool and water the plants

    Just did 7 pints of russets and added what you did. Never put vinegar before. So thought I would try to see. They came out so nice and still white.
    My others were not. Will do it this way from now on. Oh, I still pressured canned as I had it out from before. Thank you for your videos. Learning so much.

    So I pressure canned 10 quarts of potatoes a couple weeks ago. I opened to and they were good but to mushy. So I’m excited to try the with the water bath method. Because of your knowledge of water bathing I was able to can one of our favorite soups we drive an hour to every summer to get from an old family church picnic! I appreciate your knowledge!

    As much as I would love to water bath everything something's are still going into my pressure canner just to save on propane..... We live totally off grid an on a fixed income an with propane going up along with everything else I can get things canned quicker in my pressure canner but I truly LOVE the videos and all the info there's so much I'm learning! And I think the recipe will work just as well either way , I'll be finding out soon since I just harvested my potatoes early since we had a stray cat laying in them every night and crushing them..... Long story But I truly love learning an knowing these old ways!!!! Great video hon 💕

    I wish you could get one of your ladies from the Amish Country to do a cookbook even just a small pamphlet on how to water bath and how to can if nothing else canning cuz it's USDA approved but I'll be honest with you I would love to learn how to water bath again because my grandmother used the method God bless you and thank you and regardless of if this comes out or not I will find out everything I can on water bath and I will try to use that and if I have to I'll call home and see if anybody still alive that uses it thank you

    Your videos of the Amish canning are amazing!! I was so excited to find you on UA-cam! I watched your potato video and went out the next day and bought potatoes and water bath canned them lol. I wanted to ask you about how long it takes for the jars to seal once out of the water? It’s been an hour now and still no seal pop. I followed everything you said to do so I hope they seal properly. Also, I loved the recipes you gave from Susie and would love to hear how to water bath the peach jam recipe after cooking them. Also I cannot find the orange-pineapple jello so can you recommend what to do without it? I’m a new canner so I’m a little unsure! Thank you!! 😉

    I was thrilled to see this! My original attempt, yes ago, was terrible. Never again, I thought. Thank you & Suzie for the info. My potatoes turned out clear & I'm so excited! I'm going to be canning green beans & carrots next. I'm hoping the dash of vinegar in the carrots will help with the mushiness. 🤞

      @@jamibutler1768 I was able to get a copy of the 1945 Kerr Home Canning Book that she talked abt. So I canned the carrots for 2hrs & green beans for 3hrs.(did the vinegar & salt like she did with the potatoes) They both turned out beautifully! I've done carrots before & the looked horrible. Haven't tried them yet but will update when I do.

    I would love to see a follow up on how they taste and the texture. I’ve been canning small diced potatoes to pan fry but anything bigger in size was not pleasing to us. Thank you!

    Great video! I am new to water bath canning-or for that matter any type of canning 😂 what type of potato are you using? I was thinking Yukon gold would be a good potato but just wanted to see what you used for your canning. Thank you so much for putting out this Amish series. It's very interesting and I really appreciate the Amish. They're going to be rockstars when our system goes down- they will thrive.

    Love seeing the demo! It clarified the "rinse until clear" as I didn't realize that was after you cut them (verbal instructions from previous video).

    Why does this look so easy. I got a monster canner and used it for a while but I was terrified of it so gave up. I will definitely try this potato recipe and water bath.

    Very interesting. It reminds me of how my granny and great aunt would can, not that I realized what they were doing when I was little, I just thought they were magic lol. Only trouble was that every few years or so some jars or whole batches would spoil and either explode or be rotten when opening. They were total pros and learned from Amish folk in the Amana colonies in Iowa. But still there we occasional issues. It’s why I pressure can low acid food. Failures waste so much food and effort and hey it’s faster and I’m a busy gal. Outside of any debate about testing or how people have done it for a long time, I just couldn’t bare all my hard work and food going to waste especially in an emergency.
