ingredients list:-
1 kg Bittergourd
salt to taste
3 onion
1 tsp coriander seeds
1 tsp cumin seeds
1 tsp saunf powder
1/2 tsp kasoori methi
1 tsp coriander powder
1 tsp cumin powder
1 tsp Dry mango powder
chop coriander
asafoetida 1 pinch
3 tbsp oil
2 tsp coconut powder

This is a very nice and healthy dish.
I make stuffed karela using small variety of karelas. I marinate the karelas in a mix of salt, haldi and lemon juice for about 15 minutes. Then wash . This removes the extra bitterness. Thereafter i don't steam but stuff them with masala and fry on low flame. I add the grated outer skin also and make with thick gravy and it comes out very well.
Masala also is of 2 or 3 types, with and without tomatoes. All come out well.

One simple question, why everyone is obsessed about removing the bitter taste of Bitter-gourd!!! Nature has made it bitter for a purpose, we should accept it and eat it the way it is, rather than changing it's intrinsic properties. If someone does not like bitter taste then they can happily skip it..
With respect, plants are master chemists and make sure to put their poisons in their skins and seeds to keep it animals from eating their babies. As humans we are the most intelligent animals we figured out how to avoid these poisons while maximizing nutrient extraction. Same reason you soak beans overnight. Lectins are poisonous and must be removed.
This process does not remove the bitterness completely. But makes it palatable. There are health benefits of eating karela but it's utter bitter taste makes it inedible fir many people. I have seen some vomit trying to eat it.
My husband and I eat couple of pieces raw also and use it in kashaya everyday without removing the bitterness. But curry recipes like these will help make it to mainstream cooking and many people, even children can eat karela.
