- We’re super happy to share a new recipe and video from Lucas Sin.
His Chiu Chow-Style Boiled Beef Hot Pot is simple and decadent. A sparkling clear coriander (cilantro) and mushroom broth is built over braised beef bone.
The cooking couldn’t be simpler - the wagyu gets a 10-second swish through the simmering liquid.
“It’s elegant, not over-spiced, it won't get in the way of the natural sweetness of the wagyu,” says Lucas.

Well before he said, I was thinking it's a Cantonese style shabu shabu. Lucas you did it well... as usual.
Shabu Shabu is the Japanese term for Chinese Hot Pot from northern China. Shabu Shabu itself is extremely new to Japanese cooking.

Dude, Chinese food is already more prestigious than french Italian food. If you look at Italian food, the pasta and dried meats etc, it’s all Chinese just ask Marco Polo!
Yea, that was the comment that stood out to me. I also assumed that the depth of Chinese cooking knowledge was already well-known, and I say that in a humble way. His comment made me question it
If Chinese food is more prestigious in the USA, then why are there more French or Italian restaurants that have Michelin stars than Chinese ones?
@@voightkampffchamp By that definition, you are right. To the regular experiencedeater and not the writer for guides, most know of Chinese cuisine's virtues. Michelin is more Euro-focused, and I read their selections with the understanding of that bias.
@@voightkampffchamp A euro centric based classification system is always going to be biased to french/english/italian cuisines. Thats kind of like asking your mum to rank all the sons in the world, I'm sure you'd be a 3 star son for sure lol
