    Becky of Acre Homestead makes a power of her freeze dried food and she puts it in almost every dish she makes. Like freeze dried zucchini she just breaks it up in all kinds of soups and her powder tomatoes she uses in everything. I don’t have a freeze drier but I am interested in what everyone does

      I dehydrate, chard, kale, potatoes, celery, etc and make a powder to add to everything. Some of the greens I leave chunky. It will work without a freeze dryer.

      I mostly freeze dry cooked meats, eggs, coffee creamer. Things I can't dehydrate. I dehydrate herbs, corn, carrots, etc. I just love and I'm addicted to freeze drying, dehydrating and canning.

      I am an old lady now and wish I was born a lot later in life, so I could have all the advantages you do now as I did everything the old fashioned way. Now I do nothing but miss it so much that I watch you all and live though your happiness. I am from Saskatchewan. ⭐️⭐️⭐️⭐️⭐️⭐️⭐️❤️💚🥰

    Check thrift stores for salt & pepper shakers with different size hole-to use to plant wee tiny seeds. Can put tape over some holes for really tiny seeds. My dear hubby was our Family Farmer and this is such a bittersweet season for our family as he passed 2 yrs ago. (I’m mobility limited) remember: “We get too soon old and too late smart!”

    Well I just want to get up and make some of those Crepes but its way to late at night...so I will just have to cry and wait until I can :) That is very sad for the seed company how tragic :( Reene's Garden is a company I have bought from the states for years they ship to Canada. Her seeds are mostly heirloom and she donates seeds all the time to growing garden's and all sorts of organizations I think even schools to help people plant their own food. I always get so excited too going through my seeds!! Oh my yes that painted corn is glorious. Can't wait to see it. I am loving the freeze dryer and never thought you could do milk, but of course why couldn't you. Wonderful. hugs

    I understand that the zone refers to how cold it gets, therefore what plants will survive as a perennial. For your seeding dates, you need to Google your last frost date, and count back the weeks. Two different animals!! (;

    Hi from Kamloops! We just freeze dryer onions to have handy for soups or pizza, and the other day we did 24 eggs! They are sealed in a mylar for next time the chicken go on strike : ) Milk is something I want to do as well. Today, I cleaned out my vegetable drawer in the fridge , chopped it small in the food processor, and am dehydrating it to have all that colourful goodness in a jar ready to add to omelettes, or soup, or whatever!! So fun : )

    Now that you have a freeze dryer, you'll be able to grow a lot more perishable vegetables so that you'll have kale, zucchini, etc. throughout the winter. So exciting. Happy growing!!

    We call squash like butternut. And the blue one is called queensland blue. Pumpkin we categorise squash as pumpkins

    You can freeze dry your garlic, onions, celery, etc for seasonings as well as kale and spinach for additions to soups.

    There’s only 3 of us in my family. I waited 3 years to get a good deal on an Excalibur dehydrator & got it. Just honey dipped 5 large bunches of bananas(.59 a lb) that I vacuum sealed in a jar, divided some into snack bags. They’re just like candy. A freeze drier would be wonderful but an expense that we couldn’t justify for us right now. I’m excited to see what you come up with.

    I love this Butternut Squash and Kale Risotto packaged with very small bits of dried kale and squash. I imagine it might be a 1/4 inch dice before drying. "Alessi Risotto With Butternut Squash "

    I used to grow in zone 3b and my garden was beautiful. I had a small greenhouse where I grew my cucumbers and tomatoes. Now I am in zone 9b so very different. Our last possible freeze is Feb 1. I have tomatoes in the ground. We got one freeze this year and I lost some tropicals. Many years it never freezes. I must have flowers in my garden!!

    The freeze dryer is changing my plans in the garden this year as well. Speaking of freeze drying while chopping onions today (12 pounds worth) I thought of you and your issue with onion fumes. A trick I use is a small fan, I set it up to blow across my work station while chopping and I have only one onion cut at a time then I transfer that to a covered bowl till the task is complete, it saves me from all those tears for sure. lol I ran milk just the other day in the freeze dryer and have chicken broth I made to run after the onions, then I'll pull eggs from the freezer to run after that. It's nice having so much more room in the freezers and I look forward to have good quality food, shelf stable for longer. Checkout Phil at 4800 feet here on YT for lots of freeze drying knowledge.

    I'm starting my tomatoes and peppers this week. I live in the deep south of the United States and we have a long growing season. Having said that we have many more disease's and pest to deal with. I love growing winter squash but I can only grow the moschata types like butternut and Seminoles, because the vine borers decimate the vines of the pepo's and Maxima's. One year I tried growing some blue Hubbard and the borers killed those vines first. Then we have the high heat and humidity so we are constantly battling powdery mildew and blight in the tomatoes and potatoes. Even though you can't start as early as we do, you do have some advantages we don't have. Like you I can hardly wait to plant out my summer plants. We grow our cabbage, broccoli, kale etc through our winter.

      @@LittleMountainRanch you are such a sweet soul and you make taking care of a family look easy. I'm going to make some sourdough bread but I need a refresher course on the starter. Back in the day when the kids were growing up I made it pretty regularly, but now it's just me and my middle child who gave up his bachelor lifestyle to help me out after my heart surgery and the AFib that kept putting me back in the hospital so much. He doesn't seem to mind because he certainly eats better than that packaged junk he put in the microwave. I cook from scratch and do a lot of canning already prepared meals he can heat up with no chemicals added to it.

    When I mix with ingredients in a blender I start with a liquid first! Eggs, milk Etc!! Water helps with gumming up!

    I am not a fruit fan anyway, so freeze-dried fruit is not so exciting for me. BUT I do freeze-dry it and then powder it in my Vita Mix. I use the powdered freeze-dried fruit to mix into my homemade yogurt along with a little home produced honey. Yum!!!

    With my freeze-dryer, I’m definitely an “ingredients” preserver … (other than freeze-drying leftovers)
    I use my produce for soups and I love turning stuff into a powder and adding it to potatoes, soups, and even slipping it into my sourdough.

    I really think the more you use your freeze dryer for ingredients to make meals the more it will work for you and your family. It's not in my budget but I sure would like one!!❤

    I’m loving freeze drying raw eggs! They make wonderful scrambled eggs and I did a drier full of hash browns- blanched or they’ll turn black when rehydrated! Have fun with your freeze dryer. Also, if I don’t have another batch going in. I just turn it off and leave the door propped open to melt the ice. You can layer upon layer as long as it doesn’t go too high over the top. I put parchment between my layers. A lot of people do not. Also, seal each bag at least twice. I do three if I have room.

    I’m zone 5, and am anxiously awaiting the right time to start my tomatoes. I tried Amish paste for the first time last year, and it quickly became one of my favorites for fresh and sauce. It’s so fun to see what you’re growing.

    Hello! I highly recommend putting paper towels under the cheese. It'll soak up some of the grease as it's sublimating 🙂 Just had a chance to use my raw freeze dried eggs for the first time and they worked great, especially for breakfast sandwiches in a round cookie cutter!

    Have milk in out freeze dryer. Next will be frozen vegetables. We have done blueberries, banana, garlic, strawberries, eggs (amazing), mushrooms, peppers and onions. Oh and Marshmallows they did require a drum cleaning not hard just a little coat of a powdery film

    You can freeze dry blueberries and turn them to powder, then slightly reconstitute them to make swirls in homemade vanilla ice cream; you can add the powder to homemade whipped cream, muffin and cake mixes, and they are fantastic.
    You can freeze dry tomatoes into a powder to make a tomato rice (known as Mexican or Spanish rice).
    Experiments are the greatest fun of having a freeze dryer.
    Having things like that on hand are extremely convenient and healthy too.
    Your crepes seemed more like blintzes to me, but as long as your family eats them happily, who cares what they're called.
    Not related to this video, but in a couple of your videos you made things using chocolate hazelnut spread, didn't have time to comment at the time, but making your own is so much better tasting and doesn't contain an obscene amount of preservatives.
    Was wondering if growing nut trees in your area was a possibility?
    With the amount of property you have, the price of nuts and the amount of extra hands you have to collect them, surely that would be a wise choice, and you could sell what you don't consume.
    Just A thought.

    I like the way you are approaching your freeze drying endeavors. We are of a similar mind. We do like to freeze dry fruit to eat them as fruit chips though. I don't reconstitute them unless I am tossing them in yogurt where they soften up a little. We can't wait for strawberry season to get here so we can freeze dry as many as we can. They are so delicious.

    A quart of liquid fits on each freeze dryer tray, if you have the medium size. 18 eggs per tray, also. I also freeze dry bone broth, because it takes up so little room. You can also freeze dry sour dough starter for later. I freeze dry tomato skins and powder them to use as a thickener when making any kind of tomato sauce. Saves a lot of time, and you don't loose so much tomato juice. I cooked potatoes and made powder to also use a a thickener or to make mashed potatoes. Chelsea, you can do almost anything you want with that thing!! Make it work for you! I wish you well By the way, I just had to have one of your aprons! Just ordered it.

    I love how your big box of seeds says "Claire's Knitting Stuff Only!". Lol, I hope her knitting stuff found another box! It makes me feel more normal, we're always repurposing things here.
    Zones aren't actually very helpful for gardening. I'm in a zone 8b in Oregon, so is my friend in Georgia, the complete opposite corner of the country. Our weather is cool and rainy much of the year, and completely dry in the summer, with relatively low humidity all year while hers has less rain, higher temperatures and humidity. Add in the microclimates, and its just not a very good metric.
    I'm a bit jealous of your freeze dryer. I might decide to invest finally this year.

    I only plant a couple kinds of squash but delicata is my absolute favourite.. i like the personal size plus you eat the skin.. husband doesn’t do squash.. so perfect for me

    I got my freeze dryer late last summer. I had it in time to do some of the later tomatoes, but that's most of what I was able to freeze dryer of the food I grew. However, what I most enjoy about my freeze dryer besides the fruit snacks like strawberries and apples that we eat freeze dried, are herbs, mushrooms, onions etc. Some of these things are things I buy and use once before they go bad in the refrigerator. Cilantro, green onion, mushrooms to name a few. Cilantro we use freeze dried, the flavor is just as strong as fresh. I don't have any plans for long term storage of food. I store my freeze dried food in mason jars, and if I'm not going to use it right away I vacuum seal it. Hoping this next garden year to do onions, rhubarb, zucchini, more herbs and greens like spinach, and trying to think of even more things. I am also trying to free up my single upright freezer of the veggies stored there. I love my freeze dryer!

    Don’t waste your money with Mylar if it is some you will use in a year. Just get half gallon mason jars and vacuum seal with used canning flats. Jars are reusable and will be cheaper in the long term.

    My Father loved to make crepes with his super special crepe pans back in the day.... we would have them with molasses on top or brown sugar filled.. you've inspired me to make crepes for breakfast tomorrow!!

    You should try to freeze dry applesauce., ice cream bars, boneless skinless chicken just to say a few
