Brooke, the spam/potato skillet looked great, will try. When I saw the contents of the $10 bag, my favorite recipe for squash and zucchini came to mind. It's roasted like yours, only add about half of a green bell pepper in small slices. Olive oil in bottom of baking dish, add squash, onions, pepper and toss with seasoned salt and Italian seasoning. Bake until tender, then sprinkle with parmesan cheese when served. It This is awesome.
When I see the ingredients It took me about 10 mins to think of what to do with them if I had to use them then I wanted to make some corn chowder with the squash and zucchini pureed as the base and use the potatoes and spam to make breakfast hash.
When I was In Home Care I had a lady who loved Bushs Great Northern Beans and diced Spam. I also had a gentleman who had a slice of fried Spam with 2 eggs every morning. I myself love a fried Spam sandwich every once in a while. ❤

This is a real fun idea. I would love it if you guys threw in a challenging ingredients for a curveball. It doesn't have to be too hard to do but it would be fun if it was like chopped where you had like three random ingredients that maybe don't make sense to challenge to put together with the ingredients in your kitchen or something fun like that.

When I was a child, my Mom would make spam. She would slice it and sear it in butter. Then add pineapple slices and brown sugar on it. Was tasty. Good idea to boil for 5 mins.
I saw one of your videos using the kinder caramelized onion butter and really wanted to try it. I fixed a side of corn one day and used that as the only seasoning. It was so good. Everyone in the family LOVED the corn. We also used it instead of garlic on bread with cheese (some family can't handle ANY garlic) and it was so awesome. Love your channel. Looks delicious! Another good option for that corn is to fry it in the butter and add some chili powder and salt and let it get a little browned like you did. Husband loves it and he's super picky!

I wanted to share sometime I just learned to do with the frozen corn. Thaw out the corn and then run it through a food processor (about 1/2 bag at a time) until it is creamy but still has texture. Cook it in a cast iron skillet with a little bacon grease, butter, salt and pepper. Tastes very very very close to how "creamed" fresh corn off the cob tastes in the summer.

Use Red potatoes or Yukon golds. They're not grainy or fall apart like Russets or white potatoes. (I know this meal wasn't purchased by you 😊). You got another homerun, Brooke and Vickie! That meal looks yummy. Great use of the veggies and the instructions for desalination of the spam are winners! Potted or canned meats are over salted. I get that it's meant as a preservative, but all of our pre-packed foods are too salty. I'm glad to see you've used a desalination method and not added more salt to the rest of the meal. Although, your hubby will taste and salt it. Im glad he tastes it. Good looking out for hubbies and kid's health, Brooke. Hypertension is no fun.
