I’ve gotten better texture over the past while. But I noticed something recently. There’s one whole organic milk sold by Farm Boy that I can never get right. I steam it like I do with others and it always has this odd bubbling. Could it be that I’m just unlucky, or is there a difference between whole milk brands? I never run into this with others. I’ve even had better luck with oat milk. Thanks
@@Photosandfood Oh yes, some milk interacts strangely with the rise in temperature. I'm pretty sure you are familiar with proteins and how it can respond to certains kind of process. I guess this farm boy milk is just the way it is ! It reminds me of rice milk or coconut !!
Hi.. I am also a barista and always shaw your videos that's makes my skills more perfect, I feel very good very good while customers love my coffee or coffee making skills. thanks you very much sir for that kind of videos.
Just after watching this video I tried to steam milk this way and finally I got macchiato just perfect, just as it should be! Thank you for advice, I enjoy my perfect coffee over and over again 😋😋😋
Heres an easy way to know when its the right temp (for me at least) so keep fingers at the bottom of the jug to feel the heat once its too hot to keep your fingers on it then count to 6 and then turn it off. It always gets me to 65 every time
Thanks you so much, next week I'll be getting a new De'longhi Dedica (arte) and I don't have any fancy thermometers to tell the milk's temperature, so I really appreciate this advice
@lollo17mw2 that's why i said (for me at least) when I typed it but yea to everyone who is trying out ther machine use a thermometer if u want exact or test the heat when u make a coffee and experiment with it to know when to stop
When using a 4 hole steam head, I think the best placement of the steam tip is directly in the middle. Placing it in the side to make vortex is normally done for steam heads with less holes, which you see James Hoffmann and a lot of other baristas do.
How to not have too much milk? My first try i got a very good milk layer but there is no taste of my coffee anymore hahaha! Btw your video helped me a lot!
@@evazzz9852 After considering all options we eventually found it had to do with the steam wand tip. The one we were using had 4 holes and after changing to a 3 hole tip we are getting beautifully silky milk. Very interesting.
If i haven't a way to measure the temperature, is there a way i can feel the right temperature? Usually i try with this: if my hand can't stand the heat of the pitcher, it's ready. But it's an hypothetical way, i did read this tip once but actually i don't know if this is right...is there any other way to feel it?
Hey mate. It's the right method if you dont have a thermometer, but your hand gets used to the heat. There's another method you can combine with the hand method, the sound. A milk burning with a steam wand will be a lower sound. You can hear it if you try. Try to pour the same amount of milk in your jug each time and start the timer. Stop when de sound change. It means you burned the milk. Substract 2-3 seconds for the right temperature. Please keep me in touch.
Thank you so much for your time to answer me! Actually i don't think my espresso machine is high quality...i'd say it is medium/low...for example, my wand has one hole instead of 3/4 of a professional machine (like yours as i see i the video), so i noticed that the steam is less powerful in some way...i tried again these days and sometimes i got good foam, but unfortunately i still get bubbles in it...but the sound tip is very clever! I didn't actually tried to focus on that! Another thing is that the vortex in the milk is not so evident...but maybe it's because my wand has one hole :(@@CoffeetoArt

I don't know the correct ways so don't take my word for it but as you steam the milk, you can feel it warm up, I've heard that you go until its painful then stop. For me I need to go a little less than that or else it burns but just going by feel is how me and two other people I know do it. A thermometer is possibly the only other way to do it since it varies in time depending on how strong the steam is coming out of the machine and such.
Hey Jack ! Hope you potato's good :) You should be fine with the cooksworks. Whit low steam power, the swirl is your best friend. Find the best spot and keep this position. Don't forget to tap you pitcher after steaming !
@@CoffeetoArt ahaha wow you’re funny too lol! Thank you for responding. why is my steam pipe always getting milk stuck on it ? even if i wipe it immediately, upon the time im done using it, it's insta stuck there. i have to make a batch of hot water in a glass to dunk it in to make it soft again and wipe a few times with pressure applied. can i avoid this ?! what am i doing wrong ?
Main comment. This video assumes the number of spouts coming from the steam wand. In my experience a three prong requires a different technique to a single prong.
Hey Alan ! Barista express can make good milk but the rotation is the key. You need the find the perfect spot to make your milk swirl. Make sure to hear a constant light foaming sound and you should be fine ! You can try differents milk % too. Keep me in touch :)

Is it important where the tip of the steam wand is in the milk-near bottom near top or somewhere in the middle or doesn’t matter?
Do you prefer to 1 or more (2, 3 or 4) steam holes?
Hey mate ! I prefer 4 holes !
I can get nice smooth texture but bubbles tend to appear a few minutes after it's been poured. Any ideas why that happens?
maybe it is because of dry steam

Does adding sugar affect the process? I add sugar and syrup to the cup prior to espresso drip.
