You can tap any Birch tree, White or Paper, Yellow and Black.
I gather you can also ferment the sap and make birch sap wine.
Yeah I’ve not tried it myself but apparently it works well

Does the tree need to a certain age to get sap
As long as it's not a sapling it's fine. I find the older and thicker the trunk, the better the yield
Why my birch sap is brown?
Ah yeah that can happen, normally if it’s brown after a half litre or so it clears up
