How to tap Birch Sap | Health benefits & a taste of spring

  • Tapping birch sap is one of my favorite parts of the spring. Birch sap has a very sweet taste and lots of health benefits, and it has been a part of the nordic tradition for hundreds of years.
    Back in time, they said "drinking marrow into the bones" about drinking birch sap. It was a way of regaining energy after a long cold winter. Sometimes, they even gave it to the livestock, to give the cows, goats and horses some extra energy.
    It contains minerals and vitamins like calcium, potassium, magnesium, manganese and sugar. And also proteins, amino acids and enzymes.
    In this video I show you step by step how I do when I tap birch sap. The sap can only be tapped in the early spring for about 3-4 weeks. From when the snow and the frozen ground has melted, until the first leaves starts to bloom. Depending on where you live it might differ a lot. In the south of Sweden it's around march-april, and where I live in the north of Sweden it is usually the beginning of may until the end of may.
    For many of you (if you even have birch trees where you live) it might already be to late. But I hope that you feel inspired to try it out next spring or whenever you get a chance.

    I tapped my first tree last night, here in Alaska and by the next morning my mason jar was full of crystal clear, ice cold goodness, just like you described. It was amazing and I drank the whole thing. Thank you for teaching me this wonderful thing. Bless you, Jonna. You are a powerfully inspirational spirit who is a much needed breath of fresh air.

      @Phil Low of course everyone deals with everyday things like taxes and such, but what I meant was how great it would be to live in her little village surrounded by trees. She's much more in touch with nature than most of us, and I admire that.

      @Phil Low Dear Phil, this is a very real way of living. Many people here actually believe this kind of lifestyle to be superior to the "modern" lifestyle in many ways, as do I.
      I don't know how your thoughts work but I do know that I live in Finland (neighbour of Sweden) and nature is a big part of our culture. We love the pure nature and respect it. I go to high school but I also obtain my food from the nature. I fish almost every day, grow veggies, collect berries and mushrooms and sometimes I hunt. I don't worry about third world things and I don't include people who complain about car payments into my life.
      I live a simple and balanced life as half a part of nature. If I run out of food and for some reason don't have time to go and get some, I don't eat. I rarely go to supermarkets for food. It is all real, people in so-called full 3rd world countries are often blind to this and some, like you, don't even think this kind of lifestyle exists in 2019.
      I hope my reply gave you some insight into the world as you know it.

    I live in Alaska, and I remember being taught how to tap birch trees for sap in elementary school. Probably for science class, but we were allowed to taste it, and I remember it vividly. It’s absolutely refreshing and lovely...

      Same here in Russia except my grandmother does the job as a kid I used to help her collect as many saps as i can to prepare for the winter we also use it as supplement if any sickness happens in our family back then.. I feel so much nostalgia

    I’m from a small village town in India. Another place in the earth which procure and preserve nature and its beauty. I can very well understand that it’s all same wherever you go.. people are all same. Love the way you live with nature.     I've been trying to connect more with the nature. I live in a city so it's not so easy to get somewhere where there are no sounds of people or cars. I definitely want to try this someday. Videos like these give me peace of mind.

    I think I’ve found my new happy place 🥰 Deeply moved by all of this. It makes me want to enjoy nature without headphones, to close all social media apps and just be outside. It kind of reminds me of how it was when I used visited my grandparents berore the 2000’s, before digitalization went this far. Extremely thankful.

    I was born in Belorussia and one of my earliest childhood memories is that of a big jar, almost overflowing, tied to the huge birch at my Grandparents dacha. It tastes fresh, sweet, with a dash of citrus. Lovely. My Grandma knows her plants, so every spring and summer we collected birch sap, birch leaves (they were put in alcohol and must have had some antiseptic properties), nettle (you can make delicious soup out of that) and linden blossoms (you dry them, the tea from the dried linden blossoms is sooo fragrant and delicious). Thank you for reminding me.

Linden are very high trees and my Grandma is rather small (she is around 1m54 or 5′ 0), so to be able to get to the branches and collect the blossoms we always used very high tech equipment, such as my skipping rope, hahaha. So imagine this: one short, old, but very feisty lady and a little determined girl, jumping like crazy, laughing the whole time, while trying to "fish" for the branches. Good times. :)

      If you knew Birch trees you would also know that the Moose eats its branches and buds, Raw Deers eats it's lower branches, buds, and its bark, Hares eat its bark at the root level, Mice its soil roots, insects and larvae it's leaves, its bark, its wood.. etc.
      The Birch is a resistant tree that craves a lot of water thou, its roots can be up to 300 meters long in their searches for water, they gladly grow into your well, your gardens flowerbeds, and vegetable patch, you can also find them in your water pipes in their search for water.

    Greetings from the Urals (Russia). Birch sap is delicious, the taste of spring. If you choose a birch closer to the water, say near a river or lake, then there is so much juice that a whole bucket runs in one night.

    I bought a bottle of birch sap in my local little grocery store yesterday. (Yeah, in Latvia you can buy it in shops or markets). It was on the verge of starting to ferment, but I put it in the freezer. Now I'm drinking ice cold birch sap and watching this video. Birch sap is great!

      @Wiktor Wyroba You are wrong. Historically (1629-1721) parts of Estonia and Latvia belonged to Sweden. Some people have distant Swedish ancestors, myself included. So you can say us Latvians are a mix of many nationalities - Germans, Russians, Swedes etc. Even our looks - grey-blue eyes and blond hair - that is considered very Latvian - also is very similar to how we think typical Scandinavian people look. There is no one "clean" nationality in this part of Europe.

I tap for maple syrup every year but I’ve never drank the sap directly. Of course I’ve had sips but never a full bottle worth. I’m definitely going to try it. Also, definitely going to try tapping a Birch tree this spring as well. I’m so happy that you mentioned how to tap and how to help heal the tree. I’ve always been taught to not tap the same trees every year. So we go out in different parts of our “sugar bush” each year. Anyways. Loved your video.

      May i please suggest the following: Before tapping the tree, please request permission from the tree. Then say a small prayer so that the tree does not feel pain and heals itself easily & quickly. After this,you can tap. All the best.

      My husband and I also tap maple trees for making maple syrup. You can actually do the same process of boiling down the sap of a birch tree into birch syrup. It just has a lot lower sugar content in the sap therefore you have to boil the sap longer to make syrup then you do for turning maple sap in syrup. I would love to try making birch syrup sometime and will defiantly start drinking the sap more often from our tapped trees!

      When I collect the birch sap (I'm also from Sweden) we use a pine stick that is smaller than the hole to guide the sap to the bottle :)

I live in an area of tropical forests, so our trees are very different from yours, but I like to believe that all of them are connected, as we are.       The world has built the stuff away from nature so you get problems, so you forget how nature is the most important part of our lives. So you think you have to BUY unnecessary stuff from a store or pay a lot for coaching or therapy, its made that way so capitalism could work. If we go back to nature and use traditional, regional stuff....80%of our problems would be solved. We would re-energize, reduce stress....we could reduce producing chemical "health supplements" and getting sick. Nature is everything we need and we need to protect it with all he have! Nature is sacred.

      @@Denkie578 Ja dat is zo maar waar vind je dat nog? Ben sinds jaren een weekje in NL geweest en ik werd helemaal gek van al het lawaai en alle mensen overal en je kunt nergens meer door een veld lopen want overal staan hekken omheen. Maar ook hier in Duitsland wordt het te vol....en nu worden we ook overal bestookt met straling door die satelieten voor g5 er is geen ontkomen meer aan.

    Not gonna lie guys, I've tried fresh birch sap once like this and it was a magical experience. Its the cleanest, tastiest, and most delicious tasting water I've ever had.
