Bone conduction is a completely wrong technology in this case.
In time it destroys the hearing by damaging the tiny hairs ( stereocilia ), the hair cells , etc.

I would like to ask a question.....When I am riding my bike I will hear the air/wind rush past my ears. If I was to wear such headphone as these, will I hear the air rush past my ears even louder? (No music playing)

I am a biker you will hear wind, but this is a good device. I run Garmin Varia radar and it is great for that and your ears are still open to hear dogs, other bikers etc.
