    Flame and sizzle...killer flavor! I prefer indirect to preferred temp, then sear...🥩🔥

    Solid cook Brutha! Either method works well as you said. I like to go indirect first and sear at the end as you end up with more red top to bottom and only a sliver of that gray/beige ring around the perimeter than when you sear first. I learned that from Greg over at Ballistic BBQ. Great job on those NY strips!!
