- Smoking a Wagyu brisket can be a delicious and memorable culinary experience. Here's a step-by-step guide to help you achieve a flavorful and tender brisket. We fired up the Lonestar grillz pellet grill to 245-260 degrees using Hickory pellets. This was 100% American Wagyu and turned out delicious. The entire cook took 8.5 hrs.
