Why would you review the bread that is meant to be eaten at the time of serving while you're at the restaurant? This is essentially testing which bread keeps better over time. Those are meant to be served while hot, steamy, butter, and fluffy, not after some intern picked up from the restaurant 3 hours before filming.
The bread still isn't that high quality then.
