That is probably a good way to go. I seem to remember trying to do this for the porch and we couldn't get it precise enough, but that's likely just because, well, it's us... :)
You need a small trim router for those openings in the Zip board, and all the drywall in your future. It's easier and cleaner than using the oscillating tool, except the dust. I use mine with a shop vac in one hand and the tool in another, you get used to it.

Could you use a piece of cardboard to make a patttern for the angled pieces? It would take longer, but would save material.

What angle is that area of roof going to be?
The roof for the extension will have a 4:12 pitch. It will match the roof of the porch on the opposite side of the dome...hopefully :)
