      Thank you SO MUCH when you say your glad im here you maybe have no idea how much that means to me i am someone who lives in bed dealing with candida i know i shouldnt be eating bread now but i am in love with sourdough and always dreaming i dont have much contact with people very isolated YOU KIND SWEET WOM'aN :)

      Hi Mary, I recently found you and have been bing watching. So far I have made beef and turkey bone broth. I have made the artisan bread, I'm starting my first rye flour sourdough starter. Filled a 64 oz old pickle jar with pickled vegetables. I'm saving everything in scrap bags for bone broth. My question is when are you planning on selling a cookbook? I'd love one. Currently I'm making a binder with your recipes. Thank you for your enthusiasm and I have felt confident trying new things in the kitchen.

    Hi Mary
    I made this Flatbread and once it was cold is turned hard as rock.
    So making it today at 400 degrees for 20 min and checking it at 15 min. I don't want to break my teeth lol
    Thank you I finally have a sourdough starter that's 5 weeks old tomorrow and it's good.

    Hi Mary! Made this today, didn't have any Italian spice but I had Cajun. Also about 2/3's of the way through baking, I sprinkled on some freshly grated parmesan. Could use any cheese I would think. It was delicious! I've started keeping my discard starter in a mason jar in the fridge since I found these recipes. Made your pancakes one night last week, also delicious!

BTW...what do you think of the blender batters? Specifically the one I made with waffles? It’s not been too popular but I am so impressed with this concept and the outcome! I’m so surprised that whole grains can create something so light and fluffy. I’m thinking it must have something to do with the egg being whipped in the blender Love, Mary❤️😘❤️

      Your waffle recipe and technique was totally tip top!
      The fluff and lightness comes from, 1. soaking the grains as they got sometime to ferment and 2. from the eggs. Egg batters are almost always fluffy.
      - Test adding/mixing in sourdough discard before letting it soak to get even fluffier product.
      - You can even switch to a batter with more eggs, but separate the egg whites, whip them until stiff peaks, fold them slowly into the batter adding little by little as your last step.

    86 likes and ZERO dislikes--this is a UA-cam miracle! Lol! Thanks for posting this series. I have a ton of starter and I don't want to keep feeding it without making something. (I hate throwing things out too!!) I know about discard pancakes, but I need more recipes!!! :) THANK YOUUUUU!! You're the best!

    I know I’m a late comer to this post, but I’m glad to have this idea! I never really have enough starter in my jar as I try to keep it around 1cup but it’s good to know. Also I had a giggle over tte foil covered baking stone! Kinda like the plastic on the sofa! 😂❤️

      Oh Rodney! LOL!! I love that comparison!! My baking stone needs a really good scrubbing from all the drippings so I was lazy and just covered it with foil!! LOL!! Glad you're here!!

    Love this. What temperature do I bake it on? Also if I save up my discard inthe fridge for a week or so will I still be able to use it the same as if it was a fresh discard? Should I pull it out and bring to room temp before cooking with it? Thank you !

      Hi Frank, Thanks for visiting. Great question...yes, allowing it to come up to room temperature is a good idea. Everyone’s oven is different so you will have to experiment the first time around but about 425°F can work very well. Keep me posted on how it turns out. Do you enjoy making traditional foods?       Whippoorwill Holler - Hi Lori!! Hmmm...that’s a good question. I think it would. That’s a good idea. Maybe bake it halfway through and once it’s a little firmer then put the toppings on and finish baking. I would be curious to know how it comes out. (My starter is very lose but I have seen some people with a starter that looks more like a dough. In that case one may be able to roll it out with the toppings on and bake it.)     I have a small sourdough starter that I started with just 1/2 cup of flour.
    I am moving into the 12 hour feed schedule and wanted to know if I could put the discarded starter in the fridge until the next feeding so that I have more to cook with?

    Made this recipe today after watching your video, and followed it closely. I poured the 3 ovals of batter onto parchment paper on my pan set on lowest rack of a preheated oven (though not on a pizza stone), but unfortunately all of the flatbreads stuck onto the paper, not releasing...at all! Where did I go wrong here? And, if doing this again, how can I have mine come out as yours did? Thanks, Mary!

      Be careful to check that it is parchment paper. I used wax paper one time and the food got stuck. Another time I used parchment paper from the dollar tree and the food got stuck. Now I buy good quality parchment paper and the foods don't stuck.

    Maybe a silly question, but I am new to sour dough starters. If you save up the discard in the fridge for a few days, can you make bread with just the discard (meaning not adding more flour to the bread recipe) after it comes up to room temperature? Do you need to feed it first if this is possible? Thx

    Hi Mary! Do you have a recipe for pizza sourdough or biscuits? I see people use a little sourdough and then regular flour, maybe they are using it not for flavor but just for leavening.

    So if you are continually discarding how do you accumulate? If you save the discarded sourdough starter do you feed it too?

      Hi Terry, great question! I simply put my discarded starter in a container in the refrigerator and no, I don’t continue to feed it. After a few days I have enough to bake with. If you thought you were going to only bake periodically and it would take longer for you to accumulate more, you can always freeze your discarded starter. Hope this helps. Love, Mary❤️😘❤️

    Hi, Mary. I am on the fifth day of making the water yeast starter. I made mine with raisins. Actually, this is my 4th attempt, the others were a disaster--my bad. Anyway...my question is: what is the white substance that formed on the top of the raisins It was scattered across the top? Could this be the beginning of yeast spores??? I didn't have a warm spot in my house and didn't want to keep the light in my oven on for 8 days. The bulb would have not lasted. So...I took the advice of someone else on the web and put it next to my furnace in the garage. Not overly hot, but warm. Help???

      Hi Eileen, That white substance could be two possible things. One it could simply be the natural sugars that have formed on the raisins and will be consumed by the good bacteria. The other option is that it’s Kahm yeast. Kahm yeast is not harmful and it is very common. But it is not what you need to raise the bread. You can remove it and hopefully it won’t return. Are you giving your yeast water a good shake every day… Twice a day? Keep me posted. Love, Mary

I am on my 4th day of the second go-around. When I looked at it this am--and yes, I am shaking the ____ out of it each time, There were no bubbles. Should there be at this point? I am so excited about creating this live "thing."

      Hi Ed, Mine is 100% too. But if you find it’s just a little too watery to stay in place when you try to shape the flatbreads, you can always add a little extra flour. But these come out great and they’re really tasty. They also work really great to use as a base for a flatbread pizza.       Please forgive the delay! I just saw this comment. Yes, it is unfed starter but it works great for flatbread - even without the baking soda. But yes, you could add it for more "puff". Love, Mary PS - a fed starter is one that has been fed and allowed time to rise.

      Yes, that is what I am doing but I usually leave my starter out on the counter and feed it everyday. So I use the discarded starter that I removed before the feeding to bake with. Love, Mary

This is a little trick whenever you are baking things where you want the bottom to come crisp and not be soggy. It works well for pizzas, flatbread, and even fruit pies. If you bake your fruit pie on the lowest rack in your oven, the piecrust will come nice and flaky and crispy… Not soggy! Hope this helps. If you have any other questions, please let me know.     Why can’t you just add more/extra flour into the starter. Why does it have to be chucked.

      Hi Inga, great question! You don’t have to remove any if you don’t want but over time you might have an extremely large amount of starter so you will want to make sure you have a very large container… Possibly a bucket. Love, Mary

      Hi Sharon, Some of my older videos don’t have accompanying recipes. I’m not sure about this one. If there is a printable recipe available, There will be a link in the description underneath the video. You have to open up the description by clicking on the words “show more” or on the title of the video or on the down pointing arrow to the right of the video… It depends what device you’re watching the video on. Once you open up the description look for where it says “recipe” and that link will take you to the recipe over on my website. Hope this helps. ❤️🤗❤️
